    Help! My husband is addicted to Steele's strawberry jam. We're going to go broke soon if we don't find a substitute. He opened the jar yesterday and it's already gone!

    Any Atkins-friendly recipes out there?

    Hiya bumpy!
    Just read your note about hubby eating up all the expensive jam. Haven't heard of it before, is it low in carbs? Most fruits aren't so be ware. I just finished canning 23 half pints of fresh peach jam for myself using the Ball Blue Book, a guide to home canning, freezing & dehydrating. I used Splenda in place of sugar, and the pectin in a box made especially for artificial sugar or no sugar added jam's. It turned out fantastic!! I'll have to really control myself in using it though, because like most fruits, peaches have carbs galore. Guess this batch will last me a few years unless I find a local dieting frined to share it with. Soooo, try making your own strawberry jam for hubby if he's following Atkins but also make him aware of the carbs in all fruits. Good luck bumpy..hope this helps some. Misty

      If he eats it that fast, then you should try making refridgerator jam. Do a web search, and you'll find lots of recipes. Instead of using pectin you use gelatin to thicken the jam, and of course you use splenda to sweeten it. The jam only keeps for a week or two, but it's easy to make and I don't think you'll have any problem using it that fast.
