    Pumpkin Mousse

I was looking for a recipe for pumpkin mousse but when I couldn't find one I made my own recipe. I would like to share it with you.

    Pumpkin Mousse

    2 cup cooked mashed pumpkin
    1 c whipping cream
    2 knox gelatine packets dissolved
    1 tsp cinnamon
    1/4 tsp nutmeg
    sweeten to taste ( I don't sweeten)

Whip all ingredients together, then pour into an 8x8 pan and chill. Cut into 16 squares when set.

Total net carbs per square 1.72 g

    Re: Pumpkin Mousse

That looks great--does it taste like pumpkin pie or more like a pudding type thing?
I bet it would be perfect for Thanksgiving.

Karen more like a pudding but I discovered it needs another gelatine added to firm up properly, hope this helps. Today was experiment day so still tweeking the recipe.

Sounds GOOD! I have some pumpkin left over from carving I could use.
How do you dissolve your gelatin? Is there a certain amount of liquid to use?

Donna, yes I dissolved the gelatine but I think using 2c of liquid for the gelatin instead of 3 will be sufficient.

Ladytina, yes you can use canned pumpkin. you may have to adjust the liquid for the gelatin.
