  • Impossible Cheeseburger Pie

    I tried to create a version of Impossible Cheeseburger Pie, using Atkins Bake Mix. It flopped.

    Has anyone been successful (sp) making this, or a similar dish?

    Post the recipe for the original, carby version and I'll see what I can do with it to get a low carb version together that works.

      The problem I'm having is coming up with something compareable to the Bisquick crust. In case you have never made one of these, the Bisquick crust before baking is kind of runny, you pour it all over the dish, and as it bakes it rises to the top and makes a biscuit crust.

        Bisquick has two things the Atkins mix does not: fat that the particles are already suspended in, and baking powder.

        Use a cup of the Atkins mix, but sift in a tablespoon of baking powder and then cut in a few tablespoons of butter, rubbing the mix between your fingers until the butter is evenly mixed in. You want a substance that will stay compressed when you squeeze it, but will crumble at the least resistance. Using a food processor is fine also at this stage, but you want to remove it from the food processor when the butter is cut in.

        Add liquid slowly to the powder - I suggest a tasty broth and/or heavy cream - and stir just enough to make a thick dough. Do not overstir.

        Pour this over your pie and bake according to directions. I think you'll like these results - let me know how it goes as this is only an educated guess on my part and I have not made this recipe.
