  • Been invited to a Mexican Pot-Luck---Help needed

    I've been invited to a Mexican Pot-Luck dinner next Monday evening and I need to take a vege-dish that I can eat that is Mexican or can pass as a Mexican dish. ':help' I'm on Induction so that limits it too. The meat available will be chicken and beef, grilled so I'll be fine there.

    Use this recipe but substitute thinly sliced or coarsely shredded jicama for the nopalitos. If you can't find jicama, use peeled and seeded cucumbers, thinly sliced.

        THanks for the idea but garbanzo beans aren't in my woe yet. Have to move through those OWL rungs first---right after I move out of induction.

            You can leave out the garbanzo beans, or leave them in but eat around them with your serving.

              What if you tried this but substitued a mexican flavored can of tomatoes and some monterey jack cheese (just use less)? When I made it with the italian tomatoes I realzied it was easily adaptable for any flavor/theme.

                this is very good ....
                Ropa Vieja

                3lbs chuck roast
                1 onion diced
                1 celery stalk diced
                2 tablespoons olive oil
                2 cloves garlic, minced
                1 large can chopped green chiles or roast and peel your own and use about 6
                2 cups canned tomatoes
                2 tablespoons tomato paste
                1/4 cup good New Mexican ground chile
                1 tsp ground cumin
                Salt and pepper to taste
                toss the whole thing in a dutch oven and put in the oven at 350 until the meat falls apart ...then shred it and put it back in your sauce..if the juice cooks out add stock or water to it you need some sauce but not too much it should come out like bbq beef...(you can use a crockpot) bring this to the pot luck and serve with all the toppings everyone else brought!!! it is wonderful!....and easy ...means "Old Clothes"

                  Probably too late for your potluck, but my favorite mexican "veggie" dish is chile rellenos. If you can get poblano chiles, seed each one, cut the stem off, and put a piece of monterey jack or cheddar cheese inside. Dip in egg wash and fry in butter till golden brown and cheese is melty. Sprinkle with salt after draining on paper towels. Delicious and induction friendly (I believe the chilles are induction friendly, you may want to check)

                    Thanks all for the ideas --- I'm not sure which one I'm going with but the potluck is Monday evening. I'll have tomorrow to prepare.
