  • Looking for Holiday lunch ideas

    My department is having a big Christmas Luncheon.. we all have to bring something.. any ideas on what I can bring that 1) I can eat on induction 2) others can eat and no know I'm inducting 3) tastes great with that holiday feel.

    Any help is appreciated!!

    Make some appetizers. I like to get premium sliced roast beef at the deli and spread cream cheese and thinly sliced red onions and a little seasoned salt on it. Roll it up tight and refrigerate. Also how about some cucumbers, green peppers, etc with some Ranch dressing. Everyone loves veggies but don't always bring them to work to share.

      I agree with a veggie platter. Many times that is forgotten and it's always a hit.

      A cheese platter is another option.

      And then there's this: I read the recipe in a magazine called Diabetes Forecast. It's the diabetic version of the "green bean casserole". However, the ingredients they used weren't all Atkins friendly. But the gist of it was, sauteeing fresh mushrooms and adding them to cooked green beans. Then mixed it with a sauce made from sour cream and little vegetable broth. Put it into the oven and bake. The recipe used a homemade version of those French's fried onions. But then I thought, why do that. Why not just slowly sautee onions or shallots until they are golden brown and caramelized?

        Ooh, I agree with the veggies! Every holiday "feast" I've been to, I've always brought veggies and dip. You'd be surprised, but fresh veggies are such a NICE change from the "standard" holiday fare, that by the end of the night, the veggies were GONE! Everybody loves veggies, whether they care to admit it or not.

        You could also do hot wings. Cook chicken wings/drummettes/tenders and then toss them into a bowl filled with a mixture of butter and Frank's Red Hot. Mix until well-coated. Serve with bleu cheese dressing and celery.

        Deviled eggs are another party idea. How about mini-cheesecakes? Meat-and-cheese tray?
