  • Ribs?

    My 10 year old son loves ribs. But the way I used to cook them...for three hours in my special bbq sauce...is loaded with sugars.

    Has anyone come up with a way to do ribs that is atkins friendly and moist?

    I love ribs as well!!!! It's a standing joke with my boyfriend and I that if I had to coose between him and ribs... he'd be gone. Anyways, I guess it depends what kind of flavors you like but almost everthing has a low carb substitute. I for one like to marinade my ribs in a little soy sauce seasonings and make bar-b-que sauce out of low carb ketchup. I am interested to hear what everyone else does.

      If you're talking about pork ribs, what I do is bake them in a slow oven (about 325 degrees F.) I put them into a baking dish, season them, and cover the dish with aluminum foil and bake for about 3 hours. I remove the foil, in the last 30 minutes so the ribs brown.

      For seasoning, I just use salt and pepper. BUT in the last 30 minutes of cooking, I baste the ribs with a 50-50 mixture of vinegar and water, and I sprinkle it with a dry rub I make from paprika, smoked paprika, cayenne, cumin, thyme, and ground coriander.
