    Hello Pau

    Do you have an authentic paella recipe that you would share with me? Besides the rice(could we substitute bits of cauliflower maybe?) what else makes the dish carb unfriendly?

    When I visited in Spain in 2000, I had the best paella ever and would so love your recipe.

    I have not seen Pau lately I wonder what is up? I make a mean paella but it is with rice :sadblinky I have used chopped spaghetti squash as a rice replacement for disserts but it would loose in the translation to Paella I know it....I am thinking of doing a brown rice one when I get to that rung I can not think of what else to use ensive the secret is in how the grain absorbs the flavors and not one veggie can do it ...like the rice does....darn it!!!....you can make it with loads of seafood like I do and then just eat the seafood..but that would be sad as well....maybe we can think of something in the mean time ..where is Pau?..she had such good recipes!!

      Damn!

      I´ve been so busy in the last weeks ... Sorry!

      The trick of a good paella is the fish broth and rice :sadblinky I tell you how to cook it and then we can all may think in a low carb way ... if possible :confused ..... as Nurselady says ..... well ... I can´t think of any substitute ...... rice is rice. And we use a special rice which we call "bomb rice". It´s round and absorb the flavour of the broth ... much better than other rices.

      First you need a big plain pan. In a bit olive oil we fry lightly (just 1 minute) some shrimps or Scampi (with salt) and remove. We´ll use them at the end.

      Then we fry minced onion (1/2), minced garlic (1 clove), minced green pepper (1/2) and tomato (just one and it must be red, minced and peeled!).

      When all the veggies are soft we add the rice and move (4 minutes) and then we add some minced squids, mix until they turn white and then we add the broth (which you should´ve cooked before with onion, laurel and all kind of strong-flavoured fish .... blue fish generally) and some saffron.

      Remember: 1 glass rice = 2 glass broth

      Let it cook together for 19 minutes, then add the shrimps and let it cook for another minute. Turn off the heat and wait 5 minutes more to eat it.

      When we cook it we don´t move the rice as it´s not a risotto. There must not be any broth left. Paella is a "dry" rice.

      That´s all. Seafood paella is my favorite but I don´t taste it since I started Atkins and I miss it :anger

          Ok! it´s perfect if you like it but not olives or capers in the original one!
