Hot bacon salad dressing

I need a good dressing to pour over my spinach salad. Today I used 4 pieces of bacon, the grease, and vinegar and splenda. The problem is it didn't make enough to even pour over the spinach. Anyone have any ideas?

INGREDIENTS

1 egg, well beaten
1/3 cup sugar
1/4 cup cider vinegar
3/4 cup water
1/2 teaspoon salt
4 strips bacon, cut into 1 to 2-inch pieces
1 tablespoon flour
Beat the sugar into the egg. Add the vinegar, water and salt; beat well. Meanwhile, brown the bacon in small saucepan. Stir in the flour and stir until smooth. Add the liquid to the bacon mixture and cook over medium heat until thickened, stirring constantly. (Can be prepared ahead and reheated, stirring constantly to keep from sticking to saucepan. If it gets too thick, add a little water.) Pour hot dressing over coarsely chopped greens and mix thoroughly. Serve immediately.

I found that online. Obviously you would omit flour and use splenda instead of sugar. If you have some of that Thick not Thin stuff, that would work to thicken it instead of flour. Looks like it would make a lot though.

add some water and onion to the pan too and deglaze the bacon pan or add the spinach and wilth it the spinage liquid will do it for you.

there was a recipe for german colslaw in the old recipe forums that used vinegar and bacon. hope it is stll there.

That's a good one, adding the spinach to the pan. I didn't think of that one. It was hard to get it all out and that will make it much easier to coat the leaves. Kudos..
