Hi,
Cod is easy to cook....you can put it in the oven in foil, with lemon and seasoning, whatever ones you like and wrap loosly. It will not take too long to cook..Im not sure what settings...I guess medium..and keep an eye on it.
You can also fry it in olive oil or butter, flesh side down first on medium heat and then skin side down. you may cover it and it will cook nicely, vert tender. You will know it is cooked, it flakes very easily and the flesh is white inside. I put lemon juice on it...and mayo..its nice..YUMMY

Cod is a firm flesh fish that's good in fish soups and stews because it keeps it's shape. It's also good fried...using low carb coatings of course!

Here's a recipe for a version of a Thai fish cake. You can make it low carb by substituting (or getting rid of) the sugar. The original version of these cakes are rather spicy, due to the amount of chilis and the chili paste. But you can tailor it to your own taste or use low carb substitutes for the chili paste.
I'm editing this to add, you can substitute lime rind for the kaffir lime leaves in the recipe.~Megs~

Cod Au Gratin
Hello,
Well I'm originally from Newfoundland, Canada, and we are known for our cod. This recipe is very tasty.............................
Cod Au Gratin
3 tbsp butter
4 tbsp flour ( cornstarch, or anything to thicken)
½ tsp salt
1/8 tsp pepper
2 cup cream
1 cup of grated cheese
Place oven on 350 F. Boil cod for 10 minutes, drain then flake with a fork.
Over stove top, melt butter, gradually at flour by stirring constantly so no clumping forms. Then add salt, pepper, cream and only about 3/4 cup of cheese.
In separate bowl, add sauce to cod and mix together.
Place in a not stick pot, sprinkle the remaining cheese on top. Cover and place in oven for 25-30 min.
* I usually use cheddar cheese with this recipe, and serve broccoli on the side*
