Anybody have an AWESOME creamed spinach recipe?
I'm a father of twin daughters, whose main goal in life is to set a positive example for them.

1st Goal.... 299... Met on Feb. 3rd, 2009
2nd goal... hopefully 275 by May 15th, 2009
Ultimate goal 180 by sometime in 2010.

Hey, I know this post is kinda old, but I thought I'd tell you what I made. It was really good. I don't measure anything, so please forgive me. Started with a couple of pieces of bacon. Remove bacon from pan and add 1/2 a sweet onion. Cook until onion is soft. To the bacon grease and onion, add fresh (not boiled) spinach. If you add frozen or cooked, it will be too soupy. Cook the spinach down until it is well wilted. Then crumble the bacon, add it back in, and add about 2ozs of cream cheese, and stir until it is melted. Careful, if the heat is too high it will get all bubbly and nasty. WHen the cream cheese is soft, add some heavy cream slowly. It will not take a lot. I added onion salt as well. Then season to taste. This is a really yummy recipe. Sorry I don't have exact measurements, but I am a pinch and dash cooker, and I only made this once about a month ago.
