I've fixed them with low carb BBQ sauce in the crockpot. Turned out yummy. I've also dipped them in egg and coated them with crushed pork rinds and either fried them or baked them. They were awesome!

make a sauce of cream and powdered/crushed dried mushrooms, heat it up slowly (I use a coffee grinder to pulverize the mushrooms) then fry the chops in onion and seasoning until just done, add to a baking pan, pour mushroom sauce over and bake at 350 for an hour or two, til tender. Yummers

The sauce rocks over veggies too

If you are on the fruit rung of OWL, you can do a fresh salsa with a small amount of finely chopped apples, coarsely chopped celery and green peppers, onions and hot sauce. That's delicious with pork.

On lower rungs of OWL, pork chops are very nice with mashed fauxtatoes and chicken stock gravy. See Low Carb Cooking Lessons for good thickeners for sauces.

YUM MOG I will make that one tonight!..... :nod

I put them between wax paper and pound them thin then you can take egg and milk beaten with a squished clove of garlic and "bread" them with a combo of ground nut flour (if on the nut rung) and parmesan cheese (if not on nut rung just use the parmesan....mixed with chile powder, pepper and a tiny bit of salt to taste..let the batter dry on the meat and let them sit at room temp while you do whatever you are doing for a side dish so it dries a little... then fry them in a skillet with a little bit of oil on the bottom....until crispy and golden (med high heat watch they can burn quickly)...

I am not a big pork fan but this is a good way to eat them ..I do make these really thin like a schnitzel....

            enjoy!
