  • zucchini hash browns?

    I need something differnt for bfast. I ws never that great with making potato hash brown. I have a good manual slicer for grating up the zuchini into what should like like raw hash browns, but any suggestion would be helpful.

    Try a well beaten egg white and a dash of low carb baking mix as binder for the shredded zucchini, and cook quickly in butter or in a heart healthy oil to minimize trans fats and get the best texture. A whole beaten egg tends to make the hash browns too heavy, so just use enough egg white to wet the shreds.

    Zuke hash browns are best with some seasonng, like fresh or powdered garlic or onions. Watch the carb count on the seasonings however.

      I never tried making these, but, there's no need to not experiment!

      Zucchini contains quite a bit of water, so if you use it, after you cut it, toss it with about 1 teaspoon of salt. Put it in a colander and let it drain for about 30 minutes. Then rinse the excess salt away using cold water. Then pat the zucchini dry. This will prevent excess watering while it cooks.

      Tell us how they turn out.

          Thanks for the input! After looking at what you guys had to say, I came up with this. I loved them. and even my high-carb grandpa liked them.

          3 cups shredded Kukes
          1 cup LC Simple Chef baking mix(I bought the stuff near Tampa while on vacation. It was all I could find.) Subsitute Atkins if you want.
          2 table spoons of garlic pepper blend
          1 whole egg
          dash onion powder

          Mix this up real good and make into 5 patties. Fill skillet with 1/4 inch of good oil and fry. It took longer to cook than I thought it would(about7 minutes on each side) on medium heat.

          I didnt have a problem with the high water content. Perhaps the LC baking mix helped.

                Just curious. I don't usually peel my cucumbers cause i feel like the peel is where all the stuff that's good for you is. But it probably wouldnt' look too yummy if you had green hash browns urplequ:
