  • Sweet Cheese Snack?

    hi everyone!

    Looking for a recipe in one of the older Atkin's books. I think it was called Sweet cheese snack. It inlcuded cream cheese and egg as far as I can remember. Probably a sweetner. Anyone have that recipe? Thanks so much- stephanie

    Yes, I have it here......

    This makes 18

    110g cream cheese at room temperature
    2 eggs, seperated
    3 teaspoon sugar substitute

    1. Pre-eat the oven to 180C (350F/gas mark 4)
    2. Cream the cheese with egg yolks until smooth
    3. Add sugar substitute
    4. Beat the egg whites until stiff, but not dry
    5. Fold the cheese mixture into the stiff egg whites. Be careful not to break down the egg whites.
    6. Grease a baking sheet with butter or ghee and drop the mixture by teaspoonfuls onto the baking sheet.
    7. Bake for 10 minutes

    Total grams of carbohydrates: 5.4 g
    grams per serving: 0.3 g

    I'm making them again at the weekend but I might add cinnamon. Yum!

      Are these kind of like cheesecake squares or something? It sounds like it might be something I'd like.
