  • Atkins-friendly "soft" foods

    This Thursday I'll be having surgery to remove my gallbladder. I was told to "eat 'soft' foods for at least a few days following surgery - like I would eat if I just got over the flu."

    I'm looking for ideas...anyone? Thanks in advance!

    I thought of scrambled eggs. Maybe something with pumpkin puree. I wonder how cream of broccoli soup would go over if it was well pureed.

    There are lots of you out there with ideas...I just know it .

          I love cream of broccoli soup. If you use just the florets, not the stems, and cook it well, I wouldn't worry about it being soft enough!! Just make sure you use the cooking water in your soup so you don't throw all those nutrients down the sink.
          Crustless pumpkin pie, caramel flan....heck, I'm coming to your house!

          I think the challenge will be meat. Ground, of course, and maybe simmered with some spices? Wow. Meat is a challenge, just how soft does it have to be? Is a fall off the bone roast or ribs soft enough, or do you need it oatmeal soft? Soup is nice, but you don't really get a heck of a lot of protein from the broth.

            Eggs in omelet or quiche form may be a soft way to get in protein.
            I think I may be tempted to try a blended ground beef concoction. Cream, beef, mushrooms, spices.
            And protein powder, cream, cocoa - makes a good shake. I like it with decaf ice cubes.
            Egg creams if you are into those.
