  • Original Atkins cheesecake?

    Hi Tom. Thanks for the welcome. My name is Sandi, and I'm low carb for life. I had a gastric bypass that wasn't very successful. So I started to low carbing it, and I'm down 210 pounds. I have lost half of the old me.

    I can't exersize, due to my fibermyalgia.

    Has anybody really found the origional Atkins cheesecake? I rember cream cheese, sweetner, cottage cheese, eggs and sour cream.

    What phase of Atkins are you at now?

    Here is the recipe from my copy of the 1972 Dr Atkins Diet Revolution.
    Cheesecake - 12 servings

    Ingredients
    1/4 cup heavy cream
    8 ounces whipped cream cheese
    1.5 envelopes unflavoured gelatin
    1/4 cup cold water
    2 eggs at room temp - separated
    3 Tablespoons vanilla essence
    1/4 of a lemon - juice plus rind
    6 teaspoons sweetener
    3/4 cup heavy cream
    Cinnamon
    Pam spray

    Method
    Combine the 1/4 cup cream and whipped cream cheese in a saucepan and melt over a low heat.
    Sprinkle the gelatin over the cold water and add to the cheese mixture.
    Stir with a wire whisk till it starts to boil and remove from the heat.
    Add egg yolks, vanilla, lemon juice and rind plus 4 teaspoons of sweetener and mix. Let cool.
    In a clean bowl whip 3/4 cup of cream with 1 teaspoon of sweetener.
    In another bowl beat the egg whites with 1 teaspoon of sweetener.
    Fold the whipped cream and the eggwhites into the cooled cheese mixture and sprinkle with cinnamon.
    Spray a loaf pan with Pam and pour the mixture into the pan and refrigerate
