  • Bone In, Skin On Chicken Breasts

    What is your favorite way to prepare them? I have defrosted some for dinner tonite, and although I love the parmesean coating I'm ready to try something a little different. Got a favorite? I especially love anything spicey! :joy

    1 minced Red pepper
    1 minced green pepper
    1/2 minced onion
    1/2 glass white wine
    1/2 glass cognac
    1 tomato (peeled, in cubes)
    tarragon + oregano + thyme

    Fry lightly the chicken in a bit olive oil and remove. In the same oil fry (low heat) all the veggies. When soft , add the herbs and the wine and the cognac and let it boil until the alcohol evaporates.
    Then add the chicken and let it cook (covered) for 30 minutes.
    Medium-low heat.

      I knew I could count on Pau for a yummy sounding recipe! I am going to file that one for now, unfortunatley I don't have any wine :sadblinky or any cognac :sadblinky and i don't get paid til tomorrow so I can't afford to pick any up. But I will definatley give that a try. Thanks!

          Well, if you had asked me that yesterday, I could have said yes to the red wine, but not today, cause I drank it! LOL

          Only alcohol I have in the house at this time is light beer or budweiser! Oh yea, and there's a bottle of Kahlua since I can't drink that anymore its been safe! :geek

            Well you could cook the chicken with beer. It´s a different recipe but I can give it to you.

            Do you have a pressure cooker?

              This isn't working out like I hoped! LOL
              That saffron recipe you posted for nurselady sounded good too! Too bad I don't have saffron or wine. I'm glad payday is tomorrow!

                OK. No panic! :icondance

                Another easy idea:

                Fry lightly the chicken and remove it.
                Then fry in the same oil (olive of course!) 1 or 2 minced onions and 2 or 3 garlic cloves ....
                When they are soft add 1 of your Budweisers! :guns a bit of salt and black pepper. Then add the chicken and let it cook (covered) for 25-30 minutes.
                Remove the chicken and grind all the sauce up!
                Mix again (in the pot where you cooked all) the chicken and the sauce and there you are .... you know ...... this recipe seem more difficult when I write it but it´s really easy and tasty!

                Now tips from a Spanish girl:
                Try to buy a pressure cooker. They aren´t expensive and the healthiest way to cook. I´ll give you hundred Spanish recipes! :hug

                  Guess what? YIPPEE I actually have all of the above ingredients! I can do this one! :joy

                  You know pressure cookers have always scared the crap outta me, is that weird? I just have this horrible feeling that they are either going to explode, or the top will come shooting off of it and knock me out while covvering me with scalding hot food and liquid! :yikes My mom used to have one and as a kid I would go no where near the kitchen when she was using it! I know, I know--weird phobia!

                    One just must follow the rules. That´s all. I promise I won´t go far and will help you using it. I couldn´t live without it. In Spain we cook a lot!

                      Yep, I drive! But I was terrified about getting my license LOL Imagine that!

                      I love to cook too and have all kinds of appliances for it, in fact I had to turn one of the bedroom closets into storage space for all the slow cookers, food processors, woks, etc because I have so many!

                      No doubts about the recipe, sounds good I'll give it a try and let you know how it came out!

                      I'll have to consider the pressure cooker, never thought about buying one before, but spanish cooking lessons sound good!

                        Once I get on Basic Training I will have to learn to use both a coleman stove (camp stove fueled by something or other) and a pressure cooker - to cook the vacuum packed, absolutely wonderful :yikes ensive :sadblinky meals they provide for out in the field.

                        It's been a long time since I exploded a pressure cooker all over the ceiling

                        Too bad you couldn't take "raw" ingredients and make your own.

                              modern pressure cookers have a pop off value to relieve steam as it gets to high and a saftey valve too so you should be fine. I love mine.

                              If you are still below the beer rung for all you other low carbers you can use one of those steam basket thingies and pour the beer in the bottom instead of the water and steamyour chicken parts and veggies in Beer or use a whole chicken anda can of beer 1/2 full stood on end makea a great roasted chicken in the oven or on thegrill.


                              you can stuff your ckicken breast with cream cheese softened and mixed with herbs or purreed greens like spinach. just run your fuinger between the skin andthe meat to lossen the skin and place the stuffing in there and then tack it back down with a toothpick at the edge.
