  • Salmon Mousse Recipe - any favorites?

    I'd like to make a salmon mousse and wondered if anyone already went through the testing to find a good one.

    Found one! It is delicious. Creamy texture. Yum.

    I tweaked the recipe a bit, cutting it in half.

    1/2 pack gelatin
    1/8 cup cold water
    1/4 cup hot water
    1/4 cup Hellman's mayo
    1 tbsp lemon juice
    1 tbsp finely chopped onion
    pinch of cayenne pepper
    dash of liquid smoke
    1/2 tsp salt
    1 tsp splenda
    1 tsp dill (spice) or 1 tbsp fresh
    almost one can of salmon (minus about two tablespoons, after fluffing with a fork)
    1/2 cup whipping cream

    Mix gelatin with cold water, then hot, stir and set aside.

    Mix mayo with lemon, onion, cayenne, liquid smoke, salt, splenda, dill. Then mix in your salmon that you've already fluffed up. Add gelatin mix to this and stir well. Set aside while making whipped cream.

    Whip your cream and then fold everything together. If you have a mould, you can put it in that. I didn't. I just had a bowl.

    Serve with cucumbers, celery, pork rinds....on top of a tomato slice (hmmm, what else?) I just ate it plain - it was so good.

    I saw one recipe for another appetizer with smoked salmon mousse piped onto cucumber slices.

    * be careful with the liquid smoke. It doesn't need much to make a big difference. Just a small dash.
