  • Quiche?

    I am going to a Mothers day brunch and I said I would bring a quiche or egg dish. Does anyone have a great easy recipe - I am the only one low carbing - everyone else is bringing croissants, muffins, fruit, smoothies...

    I want it to be more original that just mushrooms (which is all I ever use in quiche) I was thinking with salmon or crab, or feta - any ideas?

      Crab and artichoke hearts makes a fabulous quiche.

        I would try this if I could get my hands on frozen artichoke hearts. I'm not crazy about artichoke hearts in brine.

            I've made this twice: once last summer with the fresh herbs, and once last winter, when I used dried herbs. Fresh was better, but with dried was really good as well. My herbs are close to big enough to make this from fresh, and I have the crab and artichokes, so I will be having this again real soon.

            Artichoke Crab Quiche

            1 14-ounce can artichoke hearts; drained and coarsely chopped
            4 slices bacon, crumbled
            1 small Onion; chopped
            1 bunch Scallions; chopped
            2 cloves garlic; minced
            1 Red pepper; cut into 1-inch long; thin strips
            2 ounces crimini or white button mushrooms, sliced
            8 ounce lump or claw crab, drained
            2 tablespoons finely chopped dill
            3 tablespoons chopped fresh basil
            1 cup (4 oz.) Shredded Swiss cheese
            1/2 cup Parmesan cheese
            3 large Eggs
            1 tablespoon Dijon mustard
            3/4 cup Heavy cream
            1/4 teaspoon Nutmeg
            Salt and pepper


            Directions:
            Sauté bacon in large skillet over medium until browned. Reduce heat to medium and add onion, scallions, mushrooms, garlic and pepper. Cook until vegetables are softened, for about 10 minutes. Add artichoke hearts. Cook another 3 minutes. Remove from heat and add crab, dill, basil, salt, and pepper. Preheat oven to 375. Spread artichoke/crab mixture loosely over bottom of a large quiche/pie dish (10 inch). Sprinkle Swiss and parmesan cheese over mixture. Whisk together eggs, mustard, heavy cream. Season with nutmeg. Pour evenly over artichoke/crab mixture. Bake until puffed and set, about 45 minutes. Serve warm or at room temperature.
