  • Birthday Cake (real or mock)

    My husband's birthday is coming up next month and since we have throughly committed to the Atkins WOL, I really want to make him a cake or dessert he can have a smell piece of and not blow his diet.

    I've found quite a few recipes, most of which involve almond flour or ground almond. Has anyone ever used these ingredients? Have you made a low cab cake yourself that turned out great? I just wanted to get some ideas from people who have attempted this before and came out with a successful birthday cake.

    I've made cakes and brownies out of the almond flour. The coconut flour makes a great crust.

      Rung 8 Recipe
      Spiced Carrot Cake

      Cake Ingredients:
      4oz butter
      1/2 cup Splenda or sweetner
      1/2 cup chopped walnuts (if wanted)
      1 t baking powder
      1 t mixed spice
      2 eggs
      1/2 cup ground flax *
      1/4 cup almond flour *
      1/4 cup soy protein isolate *
      1 cup finely grated carrot
      * (Can mix and match these three ingredients around depending on what you have. 1 cup bake mix can be used instead, you can just use 1 cup of ground flax, or 1 cup of almond flour or 1 cup of soy protein isolate)

      Icing Ingredients:
      100g cream cheese
      1/4 cup splenda (to taste)
      1/2 t vanilla

      Cake Instructions:
      Cream butter and sweetner. Add in eggs one at a time and beat well.

      Fold in dry ingredients and mix well.

      Add in carrot and stir into mixture.

      Grease an 8" x 4" tin. Line base with greaseproof paper. Spread mixture in tin and bake in a moderate oven for 40-45 minutes.

      Icing Instructions:
      Melt cream cheese for a few seconds in microwave to soften. Add in sweetner and vanilla and mix well together. Ice cake when it has cooled.


      Can be served with chopped nuts or walnuts on top with some whipped cream.

        If you are both on induction carrots aren't allowed so you could do a "mock cheesecake" -- what I do is put a glass bowl into the freezer for about a half hour - when it's good and cold I put 1/2 cup of cream into the bowl with 2oz of cream cheese, 1 pkt of Splenda and sugar free vanilla extract and whip everything until it's fairly set up then I put it into another bowl and serve it. You can also put a little food coloring in it and add a different flavored extract other than vanilla for a different taste.

        I also put less cream cheese in the bowl (1 oz instead of 2 oz) and blend it until it is the consistancy of pudding - I had that with my lunch today and it was so good.

        If you are up to rung 3 by that time you can add almond or coconut flour because they are allowed then. There are cookie recipes with both these flours on Linda's site. I made almond "cake" tonight that tastes more like bread than cake but if I would have added more Splenda it would have been sweeter like a cake. I had a slice with peanut butter on top - that was the first peanut butter I have had in over 4 months -- it was really good!

          You guys are awesome! Thank you so much that really helped me a lot! He's not expecting to get a cake or dessert for his bday so this is gonna make him feel extra special.

                  A crustless cheesecake is easy to make and delicious. There are a lot of flavors to choose from, too.

                    Hi Carole,
                    When you say "whip everything" are you using an electric mixer or a whisk?
                    And is that a single serving dessert?

                      What rung do you plan to be on for the birthday? There are induction friendly deserts and many that are Rung 3+.
