Some people cook it. If you do a search, you will find recipes for mock jicama apples, hashbrowns, etc. You can also add them to stirfries.
Personally, I don't like them cooked because they never get soft and I don't think they taste very good. And there are better potato subsitutes like celery root/celeriac, pumpkin, turnips, cauliflower, daikon and kohlrabi. But others do like it cooked, so you have to try them cooked and raw to see what you like best.
I like them raw. I slice them into french fry shapes and use them to dip into dips. I slice them 1/8-1/4 inch thick and use them like chips for dips or as crackers. I like them sliced and sprinkled with lime juice and chili powder. I like them cubed and used as the apple replacement for a Waldorf salad. Mmm..that sounds good if they taste anything like french fries do. I could mix some cheese with crushed up bacon and dip the 'fries' into them. I'll have to try jicama cooked and made into crackers too. Thanks a lot!

Hmmmm, Beanpole--I can't imagine jicama would make good french fries. They are actually quite sweet (to me, at least). I eat them raw and I haven't found a better way to eat them. It's a GREAT snack. Especially cold. Crips, sweet, and refreshing, like an apple.June
