    Hi
    Has anyone tried making meringues with splenda? Do you just whisk the eggs whites as normal and fold in the splenda and bake as normal?

    Yes. The recipe is the same, just substitute the sugar.

            I can tell you from experience meringue is not good made with splenda. It's not the taste (I love splenda as a sweetener), it's the consistency of the meringue. To make meringue you need sugar.

              I didn'tlike them either -- it just seems easier to stay away from sweets than to eat them

                i did it once, so my daughter could "help" shape hemwith her toy icing tips. it was pretty good.
                i'm 25 years old, mom of two, ready to do this once and for all!
                note: i am breast-feeding, though my baby is nearly weaned, eating most solid food now. i am doing this diet with the knowledge, approval, and at the suggestion of my doctor and having done my homework. i will not discuss the matter in any of my posts. please don't bring it up.

                  Mine didn't turn out well either... they were too soft, as I remember. There are some commercial low carb meringues on the market and I think they have one of the "gums" in them to help keep them stiff. I wonder if the addition of xanthan gum or something, would help.
