As for tacos, there are some things you can do to imitate the shells on the recipe board but I usually just make a nice salad with vegies of all kinds, seasoned meats, cheese and added tabasco. I'm kinda lazy at times.
Since my family LOVES Mexican food of all kinds, I thought giving up tacos was going to be terrible. What I have found out is that when I make tacos for my family, I don't feel left out. I take a plate and put a layer of lettuce, a layer of taco meat, some chopped onion, some chopped tomato, grated cheese, and then top it off with some salsa. It is delicious, and now I look forward to making tacos for all of us. My family gets theirs in taco shells, and I don't, but now I don't even miss the old way. The other night I made red enchiladas, and I did the same thing with the red chile sauce. We like flat New Mexico style enchiladas, so I again layered everything except the tortillas, put it in the oven to melt the cheese, and it was still delicious.
