    There is a low carb store about an hour away, and once in awhile, I'll make a pilgramage there. They have an item called "kaak." Iit is a middle-eastern hard breadstick/cracker/biscotti/cookie thing, and it tastes like there is anise in it. They sell these in a bin, and you buy these by the weight. They are fabulous! I didn't take the time to read all the ingredients, but I do believe that they have soy protein powder in them as a main ingredient. I searched the web for recipes, and everything I've found has sugar and wheat flour--no-nos.

    Does anyone know where I can find a low carb kaak recipe?

    This sounds really good. I love anise. I'd like to sign up to borrow the recipe already.

    Maybe in the meantime I could mix anise in my flax meal craker recipe.

      Kaak research

      Well, I did about an hour's worth of web research on Kaak. So far, I've found out that it is mainly credited as being a Syrian treat. Some kaak recipes are sweet, some are more savory.

      I called the low carb store for nutritional data on their kaak, and the ingredients. They told me that it was made of soy flour, soy protein powder, yeast, salt, (maybe an ingredient or two that I'm forgetting???) and "mediterranean spices." When I asked her if she made this item, she mentioned that her "baker" makes them up for her.

      In a different recipe, I read that kaak is often made with a spice called "mahleb" or "mahlab," and it supposedly has a slight cherry taste to it. Evidently, it is available in middle easter markets.

      Anyways, my guess is that the recipe above is very similar, if not the same recipe that is used to make these. But, I'm guessing that the flour in the recipe is replaced with the soy flour/protein powder combination. Do you think it would be 1/2 and 1/2? Or 2c soy flour, 1c protein powder?

      Maybe next week I'll experiment a little. If anyone tries this out, let me know.

      Oh my goodness, these are good. And, I am able to limit myself when eating them...I'll just have one or two little ones with tea. (The store sells them in lengths about the size of your ring finger.)

      They said that the total effective carb count is about 1g carb for 2 little pieces. Actually, I was guessing that the carb count would be higher. I'm trying to figure out where the fiber is that is being subtracted out. (I think the actual carb count is 3, and the effective count is 1.)

      If you get to experiment with this before I do, please let me know how it turns out!
