  • Got veal scaloppinis-now what?

    Hey ya'll!

    anyone have any good ideas...?

    I bought a few veal scaloppinis thinking I could come up with a clever way to make them that doesn't include the ingredients I used to make them with (dredged in egg and flour) but now I can't think of anything!

    We cant have flour right?

    What can I do with them on Induction? I hate to throw $24 worth of meat b/c I wasn't creative. Anyone ?

    Dry them off very well with paper towels. The less moisture the better. Then you can sautee them in butter/oil. Adding garlic, onion, etc. to the pan for a pan sauce.

    You can also pound the scallopini until it is thin, then make a filling out of mushrooms or cheese, etc. Spread the filling on the pounded scallopini and roll it up like a jelly roll. Wrap the rolls in aluminum or plastic wrap and refrigerate at least 1 hour (this will help the rolls stick together while cooking.) Then you can brown the rolls in a skillet before baking them in the oven until they are done.

        yummy! sound delicious....BUT...I am doing Induction very strictly and I cannot have onion, so I'll try your mushroom and cheese idea! what a good pairing for a cheese?

          Onions are listed on the Induction Acceptable Foods list. So whoever told you that you cannot have onions has never read the list carefully.

                ah-ha!!! One cup of raw onions. GOT IT! THANKS YA'LL!! I'm on the end of week two and I've lost 9 lbs. not too bad...??

                  Congrats! 9 lbs is excellent! That means you have a low metabolic resistance and is now time to move to OWL Rung 1 and add more veggies in your diet.
