  • Chicken soup from chicken breasts only?

    Hi everyone,

I've got a cold and think chicken soup would help. I've look for recipes for chicken soup but am no wiser about how to make if if have chicken breasts only - bought them for another recipe but craving soup!

Help - how can I make this?

What I've found with using chicken breasts for soup is that you can't simmer them a long time like with a lot of other soups...the breast meat gets dry and tasteless. Also, chicken breasts don't make good broth like simmering legs or thighs do so you'll need some canned/boxed broth or chicken bullion.

I notice that the recipe you're planning to use only cooks for a short time so you're good to go. Hope you're feeling better soon and back to

Yes the legs have the fat that makes the broth taste so much better, too.

If i have to use single pieces for my soup, I use the wings. They are smaller so they cook more quickly than legs or thighs. And I think they have a better flavor.

But if I have my choice, I prefer to make chicken soup from a whole chicken. It has a richer more chickeny flavor, imo, than if you use single parts.

i also save the bones and pan drippings from roasted chickens in my freezer and boil them to make soup.
