    Hello everyone,

    I am having a hard time coming up with things to eat for breakfast. I was so used to eating cereal in my former life that I don't really know what to eat! So I thought I would start a breakfast recipes thread. Post your favorites!

    My favourite breakfasts are:

    Fried eggs with mushrooms
    Cheese omelette
    Chopped hard boiled eggs or small can of salmon mixed with mayo in lettuce wrap
    Any leftovers that are good cold, especially Linda's broccoli quiche - yum!

      Omelette - any kind
      egg salad on celery
      2 over easy eggs on a sausage patty
      egg scramble with 'whatevers in the fridge'
      any leftovers

        Another vote for leftover anything!!

        Also I often make quiches with cooked veggies added along with the eggs/cheese/cream/meat to make an easy grab'n'go snack or meal. Making one or 2 big 6/8 serving quiches at the weekend while cooking other stuff is easy and means no cooking necessary later in the week.

          I can't start a day properly without eggs! Usually i have some bacon or sausages to go with them. Maybe a cucumber or some green salad as well (little or no dressing). Breakfast is by far the easiest meal for me! It is usually the only meal where i eat eggs. Lunch and dinner is far more complicated, requiring more creativity and probably work.

            This is precisely what I do. Getting yummy quiche in the morning and not having to cook something from scratch is a double bonus.

              The flax muffin is what I turn to when I get tired of eggs, but I love my scrambled eggs and bacon.

              Omelet fillings:

              feta, dried tomato, and olive

              spinach or asparagus, ham and swiss

              ricotta, oregano, mozzarella and tomato (rung 2)

              monterey jack and/or colby, and top with salsa, guac, and sour cream

              cream cheese, cinnamon and splenda (do it thin like a crepe)

                One of my favorites is taking 3 eggs and putting them in a micorwave safe bowl. Next I dice up onions, muchrooms, and greenpeppers along with an ounce of cheese and a tsp of butter. Add the veggie mix to the eggs and beat it all up. Microwave around 1minute and a half and stir then mirowave another minute and done!

                Really quick and easy! Especially if you make your bowl up the night before so you can just zap it in the morning
