Then .... you could bake some mushrooms ... filled with minced fried onion and tomato and mozzarella or parmesan on top ... or filled with blue cheese .... or whatever you want... and then bake in oven for 15 minutes. No more.
Of course some salads would be also great. One of my favourites is Fresh spinach + fried bacon + mushrooms (raw) in fine slices! + parmesan and my Caesar´s dressing! The ingredients are maybe rare but the mixture .. I swear the result is delicious!
1 garlic clove
1 little anchovy can
2 yolks (raw)
1 tablespoon mustard
8 tablesppon grated Parmesano cheese
300 grs olive oil
Salt (just a bit as the cheese is salty enough)
50 grs vinegar
Perrins sauce (just a few drops)
Grind the garlic and anchovies together.
Add the rest of the ingredientes (except the cheese) and mix and beat well until the sauce is well jointed... like mayo.
Then add the parmesan cheese and mix a bit more.
You could also cook meatloaf and serve with different mustards ..... or burgers in lettuce leaves instead of bread ......

Do a "fixings" bar.
Taco or burrito fixings bar
Use ground meat flavored with taco seasoning and offer grilled chicken breast strips dusted with the taco seasoning.
Then set up a big bowl of shredded lettuce, the taco shells (or tortillas), a bowl of salsa and guacamole, shredded cheese, sour cream, etc.
Salad fixings bar
Bowls of different salad greens, chopped celery, chopped cucumbers, sliced mushrooms, sliced hard boiled eggs, cherry tomatoes, sliced sweet onions, different salad dressings, different shredded cheeses, sliced grilled chicken, tuna salad, etc.~Megs~

here are a couple of recipes that would be good for a potluck.
Appetizer - Mini Salsa Bites (low carb)
8 oz. cream cheese, softened
1/3 C thick & chunky salsa
2 eggs lightly beaten
1/2 C shredded cheddar cheese
2 T chopped pitted ripe olives
1 T green onion chopped
1 garlic clove pressed
Preheat oven to 350º. In large bowl beat cream cheese until smooth. Blend in salsa and eggs. Stir in cheddar cheese, olives, onion and garlic. Lightly spray mini muffin pan with cooking spray, fill with mixture. Bake 15 - 18 minutes until centers are set. Remove from oven & cool in pan for 5 minutes. Top with additional salsa or sour cream if desired.
Makes 24 mini salsa bites.

Fried Eggplant and Mozzarella Finger Sandwiches
Makes about 20 Sandwiches.
Sandwiches:
4 Japanese eggplants, sliced slightly on the diagonal into 1/2-inch-thick slices
2 to 3 tablespoons olive oil
Salt and freshly ground black pepper
1 pound fresh mozzarella cheese, cut into 1/4-inch-thick slices
3 large eggs, lightly beaten
1 cup freshly grated Parmesan cheese
Vegetable oil, for frying
Herb Spread:
3 garlic cloves
1/2 cup loosely packed basil leaves
1/2 cup loosely packed flat-leaf parsley
1/8 teaspoon hot red pepper flakes
3 tablespoons olive oil
Spread the paste on half of the roasted eggplant slices, then top each of the paste-covered slices with a piece of mozzarella. (You may need to trim the cheese to fit the shape of the eggplant.) Make little finger sandwiches by placing the remaining eggplant pieces on top of the cheese.
Dip each finger sandwich in the beaten egg, then in the Parmesan cheese, until well coated. Heat 1/2 inch of vegetable oil in a saute pan. (The oil should be about 350°F. for best results.) Saute the finger sandwiches for a couple minutes on each side, until nicely browned. Drain on paper towels. You will need to cook the sandwiches in batches, reserving the cooked ones in a warm oven.

Chicken Divan Casserole
16 oz fresh broccoli florets
4 cooked chicken breasts, cubed or shredded
3 C mayonaise
2 T curry powder
Juice from 2 lemons
1 Cup grated Parmesan cheese
1/4 Cup of butter, melted
Preheat oven to 350 degrees.
Place broccoli florets in bottom of casserole pan. Cover broccoli with chicken. Mix together mayonaise, curry powder, and lemon juice. Spread mayonaise mixture over chicken. Sprinkle parmesan evenly over mayonaise. Pour melted butter over parmesan. Bake cassrole for 45 minutes.

Mediterranean Cauliflower Salad
Ingredients:
1 head cauliflower, cut into florets
1/4 Cup red pepper, chopped
2 Tbsp. fresh parsley, chopped
1/4 Cup Greek olives
1 Tbsp. capers
1 Tbsp. wine vinegar
3 Tbsp. olive oil
1/2 tsp. dried oregano
salt and pepper to taste
Steam cauliflower florets until just tender. Refresh under cold water to stop the cooking process. In a bowl, combine cauliflower, pepper, parsley, olives and capers. Toss lightly. Whisk together vinegar, oil and oregano. Pour over vegetables. Marinate in the fridge for two hours or overnight. Serve cold.

Easy Shepherd's Pie (low carb)
1 head cauliflower
3/4 cup broth or water seasoned with salt and pepper
1 Tbsp cream cheese
1/2 pound ground beef (or pork) sausage, browned and drained well (Be careful in selecting your brand of sausage--be sure it has no added sugars or MSG)
1 cup shredded cheddar cheese
Chop cauliflower and cook it in the broth until it is tender and most of the broth has cooked down. Add the cream cheese, remove from heat, and mash well with a potato masher. Add the sausage and about 3/4 of the cheese and mix well. Transfer to a medium sized casserole dish and top with the remaining cheese. Bake at 350 for about 30 minutes or until the top gets bubbly and begins to brown.

I have another Idea what about fried chicken and cole slaw
make the fried chicken or even chicken strips that you have coated with parmesan cheese and fried crispy (good cold or hot)
and a cole slaw made with cabbage mayo, splenda and vinegar.
or any kind of wings, like buffalo, tandoori, asian style low carb cola wings etc etc
let me know if you want any of these wing recipes.
Cold shrimp salad, I make mine with shrimp, mayo, cilantro and a bit of green onion.
speaking of salads how about a fauxtato salad... a low carb cheese cake
a cheese and meat platter or a cheese artichoke dip with veggie dippers???
