    Can't figure out how to make these taste like I used to eat at the soul food restaurant, tell me its possible!

    when you cook bacon, collect the grease in an old mug and store it in the fridge. When you make your collards then add a teaspoon or tablespoon depending on how much youre cooking into them. Add a little bit of salt also. I do this for all my greans acually. I cant eat them without bacon grease.

      Big Chops...not only is it possible...it's easy. Go to the grocery store and buy a package of smoked meat. I usually buy smoked neckbones or smoked ham shanks. The shanks give you a lot of meat and they're cheap! Put the shanks in a large pot just covered with water (about 2 cups) and cook covered on med-high...keep an eye on it so the water doesn't cook out totally otherwise the meat will scorch. If it is cooking too fast, it's okay to add more water. The goal is to cook for about an hour so the meat is falling apart. Just watch and when it's falling apart, go ahead and add the collards or whatever greens you like, 1/4 cup of apple cider vinegar and Lowry's seasoning salt (to taste), and hot sauce. The salt and hot sauce are basically to taste so add more as you go. Cook covered on med for at least 1 1/2 hours or more depending on how firm you like the greens. Don't worry if the greens don't look like there's enough water in them when you first put them in because they will produce their own water. ENJOY!
