  • Shrimp?

    I was in the supermarket today and saw some tiny little fillet mignon on sale, so I bought a couple of those for dinner. Surely, when my husband looks at the size of the meat, he will scoff.

    So, I figured I would cook the meat with some mushrooms and have some shrimp along with it. We have some large cooked shrimp in the freezer.

    Normally, I would do shrimp cocktail in this situation, but obviously, cocktail sauce is a no-no. Any other suggestions as to what to do with the shrimp? Homemade cocktail sauce with low-carb ketchup is not an option, because we do not use artificial sweeteners.

      What about frying the shrimp in WITH the mushrooms and beef...just add them last minute so they don't get overcooked!

        Could someone tell the the low carb ketchup cocktail sauce which this poster refers to? I would dearly love some shrimp but I only like it cold and with a tomato cocktail sauce and have been hoping someone would mention a tried and liked recipe for this.

          From what I gather, she doesn't use artificial sweeteners so making a homemade cocktail sauce using low carb ketchup isn't an option.

          Heinz makes a low carb ketchup---now it is labeled "reduced sugar". Ketchup mixed with prepared horseradish (not the cream style horseradish sauce) is typically what's in cocktail sauce.

            I use Heinz reduced sugar ketchup (1 carb per Tbsp) with horseradish and lemon juice - the amount of each depends on how strong you like your cocktail sauce - I use 3 Tbsp ketchup to 1 to 1-1/2 Tbsp horseradish and a squeeze of fresh lemon ... this makes 3 servings for me - I dip the end of the shrimp into the sauce so I have some on each bite but I don't use as much that way.

            Linda also has a recipe for ketchup if you can't find Heinz reduced sugar in your stores. Linda's Low Carb Menus & Recipes. You could probably make it without the sweetner since you're adding horseradish
