I had a hard time finding a suitable replacement for my high sugar french vanilla creamer and last night I had a brainstorm. This morning, I prepared my decaf coffee as usual then used an Atkins ready to drink shake in creamy vanilla to sweeten it with. AWESOME! I've always used ALOT of creamer in my coffee so I did the same with this. About 3/4 coffee and 1/4 shake. Plus I added 2 packets of sweet-n-low. It was delicious! I don't see why you couldn't add some ice to the mix and put it in the blender for the icy effect. Let me know what you think if you try it

Try this. I use a quade blade blender. It's great!!!! Change measurements to taste. The recipe makes about 2 servings. Let me know what you think.
½ cup fresh espresso or very strong decaf coffee
1 cup of half and half or heavy cream
1/8 cup splenda or to taste
1 tbsp dry pectin
8 to 10 ice cubes.
-Stir splenda into espresso; let mixture cool.
-Stir half and half or heavy cream and pectin into coffee mixture until pectin is dissolved.
-Fill a glass with ice and either serve mixture over ice, or pour glass contents into blender for 30-45 seconds.
VARIATIONS: Mocha: 1 pinch unsweetened cocoa powder. Orange Mocha: 1 pinch cocoa powder and 2 Tsp. orange extract.
