  • Key Lime Cheesecake?

    Does anyone have a recipe for Key Lime Cheesecake that doesn't require sugar-free lime jello? I'm one of those people who has never been able to tolerate any amount of aspertame, and all the sugar free jello I've found has it. TIA!
    1st Goal ~ 199 Onderland -Met 3/29/10
    2nd Goal ~ 174 No longer obese
    3rd Goal ~ 150 In the home stretch
    Final Goal ~ 145 or below (I'll know when I get there) No longer overweight

    Current Mini Goals:
    1) 35 pounds lost
    2) 40 pounds lost to move to Rung 5
    3) 45 pounds lost to update 15 pound loss picture series

    You could use unflavored gelatin and grated lime rind instead.

      Thanks! I think I'm going to have to experiment. If I have to experiment I'd like to leave out the jello all together, as I like a nice baked cheesecake much better than the jello no-bake. Maybe I should start with mini ones incase its no good I don't waste an entire cake, lol. I'm thinking about experimenting with my Baja Bob's sugar free margarita mix, but if I do that I'll most likely need the jello to absorb some of the liquid.

        If you re baking the cheesecake, just use the grated lime rind and maybe some of the lime juice.

          I LOVE the no-bake cheesecake w/ lime or lemon peel mixed in. The peel goes a long way... I find that squeezing juice in makes it a little bitter.
          But OMG it's SO good!

          ESPECIALLY with an almond nut crust... (grind almonds, stir in butter, pkt or 2 of splenda and a dash (or a few) of cinnomon, bake for about 15 minutes and let cool - then add your cheesecake.

          Yummy!

          Great, now I'm gonig to have to make one..

          Started Dec 2005 and lost 105 lbs by mid 2006, maintained loss for the most part until 2009...then really let go & gained some back... lol

          so:

          12/28/09 ~ 235.1
          01/04/10 ~ 229.0
          01/11/10 ~ 229.0 Grrrrr....
          (Induction= only 6lbs but lost 10 inches! yay)
          01/18/10 ~ 227.4
          01/5/10 ~ 226.8
          02/01/10 ~ 222.6

              Not with alcohol until you get to rung 5. I have the sugar free mix (sweetened with Splenda) on hand from a previous go at Atkins and have had a virgin one this go round, but you have to count the sweeteners even if you make it alcohol free.
