    Hi all

    Due to some medicines I am obliged to take I have started carb craving for the first time in my life.
    I started Atkins back in 2005, not really due to excessive carb intake but other eating aspects.
    Now I have to try and knock this craving on the head .. it is driving me nuts.

    So .. does anyone have a recipe for wraps/tortillas or similar that actually hold together ?

    I have tried various recipes ... and they just bubble in the pan and remain liquid .. so get chucked down the sink.

    Living in Italy we have enormous difficulty getting ingredients and low-carb stuff is only available if you have it sent over from the UK .... not so feasible.

    And any recipes for crackers/sweet biscuits would be SO very welcome

      Have you tried this:

      Atkins Revolution Wraps variation
      makes 6 8-inch wraps

      6 large eggs (3.6 )
      3 ounces cream cheese, softened (3.0)
      1 teaspoon onion powder (1.4)*
      1 pinch salt (0)
      1/4 teaspoon cream of tartar (0.6)
      6 8-inch cake pans (the disposable aluminum ones are perfect for this)

      Pre-heat oven to 300 degrees.
      Butter the bottoms and lower 1/3 of the sides of the cake pans. Set aside.

      Separate the egg whites from the egg yolks. To the egg yolks add the cream cheese and onion powder. Mix well and set aside.

      To the egg whites, add the cream of tartar and salt. Beat the egg whites until it forms very stiff peaks.

      Fold the egg yolks into the egg whites. Do not overmix because the egg whites will provide the "leavening" for the wraps.

      Using two tablespoons, drop the the mixture into 6 equal mounds onto your prepared cake pans. Using the back of a large spoon or a spatula, evenly spread the batter in the pans.

      Bake for 20-30 minutes in the middle rack of your oven or until golden brown. Cool completely. The wraps will be crisp when they finish baking. As they cool they will soften and will be easier to remove from the pans. Store in the refrigerator in an air tight container.

      NOTE: If you use these wraps for sandwiches for work or school, do not fill them with anything really soggy, like tuna salad, until you are ready to eat it, because the wraps might get soggy while they are waiting for you to eat them.

      Per 1 serving (1 wrap)
      Total carbs: 2 grams
      Fiber: 0 grams
      Net Carbs: 2 grams

      These are ... OK in my opinion, but not great. It is an induction recipe - I wonder if you added some bran or something to it if it would be better?

        No, I hadn't tried the Revolution wraps .. I will, as you say, see if I can add some Bran or something to 'hold them together' more !!

        I do have some isolate protein powder that I brought back from the UK - but that was what I used when I got the bubbly mess.

        I'll try some recipes from Linda's site and let you know.

          Hi Jenny,

          I like to use flax meal to make bread substitutes. It works really well and is readily available here in Switzerland, so would probably be available in Italy as well.

          Here is an example Linda's Low Carb Menus & Recipes

          I've made ones similar to this and they're great. I also make the flaxseed muffins from Linda's low carb and they're wonderful. I have to hide them from my partner so that I can at least get one or two when I make them. . I change the recipe sometimes by adding almond or hazelnut flour and some nuts. Would depend on what rung of atkins you were on.

          Where do you order from in England? You are right when you say it is hard to get low carb stuff over here.

            Hi Raegan!
            That's good to know - I am often in Lugano so I will try and see what there is .. maybe Manor or Migros have it ???
            I also want to try and get some no-sugar cordial for squash drinks. It is impossible here.
            I order from lowcarbmegastore .. but I only get them sent to my parent's home in the UK when I am over there ..
            I get the wraps and muffin mixes etc.
            I will try your recipes
            I actually bought some Almond Flour and Coconut flour today so that's good

            I did Atkins back in 2005/2006 ,, and basically remained on Maintenance because I really feel so much better in general from dropping the bad carbs.
            Unfortunately I have to take very strong medicines .. that are supposed to try and stimulate the production of dopomine cells .. and they have a lot of side-effects --
            one being making me crave for carbs ..
            It is not nice at all .. and I have put on weight
            So I have to try and find /cook lots of alternatives so I can keep everything under control .. hopefully !!!
