  • Spinach Quiche (help me modify this please)

    I know to change the sugar to splenda, but what do I do about the flour? Are there any other ingredients that I should change? Thank you.

    crust
    2 cups cheddar, grated
    1/4 tsp. mustard (dry or prepared)
    1/2 tsp. salt
    1/2 c melted butter or margarine
    3/4 c flour
    1/2 tsp. garlic powder
    1 tsp. sugar

    filling
    1 medium onion chopped
    1 tsp oil
    2 1/2 cups of fresh spinach
    3 eggs
    2 oz cottage cheese or sour cream
    1/2 tsp. nutmeg
    salt and pepper to taste
    1/4 cup grated cheese (swiss, cheddar, mozzarella, your choice)

    Preheat oven to 425 degrees. Make crust by combining all the ingredients. Mix well and press evenly into greased pie plate (10 in.)
    Set aside.
    Lightly saute onion in oil, then spread out onion in bottom of crust. Place spinach over onion. combine eggs, cottage cheese or sour cream and nutmeg, salt and pepper. Blend with a mixer. Stir in grated cheese. Pour mixture over spinach. Bake 15 minutes, then reduce to 350 degrees and bake 15-20 minutes longer or until brown.

    I would make it without the crust.

    Quiches are just fine without!

      Atkinsgal is Right--make it without the crust.

      I make Quiche all the time without the crust, it is fine, and a lot quicker!

        i agree ,i tried the quiche on linda's website and they are deadly!!!!(aka delicious) .i make them and freeze them for my meal when i am doing night duty ,. they keeps well and taste well,



        start weight =114 kgs
        goal weight =80 kgs

        1st goal-under 110 achvd (6/12/09)

        2nd goal -under 105
        3rd goal - under 100

          I would take out the flour and add an egg. Linda's site has a recipe for pizza and the bottom is cheese and eggs and it's really good. Be sure to use sour cream for the middle and not the cottage cheese.

          AND THEN, Let me know how it works because I think that sounds delicious.

            Thanks all. This is a recipe that my husband has loved over the years. I really don't want to take the crust off because there is a lot of flavor in the 2 cups of cheese that is in it. If it were a traditional pastry crust, I wouldn't hesitate to take the crust away. I just thought that there might be some flourlike substance that I could use in place of it. The suggestion by Dessertthorn might be doable though. I will take a look at the links that have been posted. I'm still pretty new to all of this and have a lot to learn.

              Not on Induction.

              Why not just sprinkle the cheese on the bottom of the quiche?
