    Hey All,

    Great site, just found it tonight and have been browsing it for hours.

    I am looking for a good recipe for Mexican Carnitas that I can make in a Crock Pot. I am remodeling my kitchen and don't have an oven hooked up. I am really craving some Mexican food!

    Not too difficult. Dust some chunks of pork or beef in chile powder with a pinch of cumin, oregano, thyme and turmeric. Brown quickly in hot oil and then toss into the crockpot for a long slow cooking.

    On top of the meat you can pour some water, some savory broth, and maybe a whole chopped tomato. Let the meat cook down slowly until it is falling apart. If you want a "pulled pork" flavor and texture a few tablespoons of apple cider vinegar will do well in the crockpot. If you like it spicy throw in some chopped hot peppers.

    Serve the well cooked meat in Romaine lettuce leaf wraps, perhaps with some low carb black soybeans, shredded cheese, chunks of avocado, and fresh or sauteed bell peppers. Yummy.

        We make carnitas all the time. After we've made them we save some of the mead to make homemade Posole. It's very good. Just leave out the hominy and it will be lowcarb also
