  • How do you cook your chicken?

    I can never seem to cook chicken that tastes good, lol. I have a problem with raw meats, even a slightly bit pink... So when preparing chicken I usually cook it for what seems like forever, to make sure its completely cooked through but it always comes out tasting like !

    I was wondering, how everyone else makes there chicken?
    What kind of seasonings or cooking methods do you use?

    I'd appreciate any feedback.... I'm horrible in the kitchen!

    ARe you using a whole chicken or chicken parts? If parts, what parts?

    Also, invest in a meat thermometer---this will prevent over or undercooking.

    For chicken breast, I tend to soak them in a mild salt solution (about 1 teaspoon salt to 1 quart water) that has a crushed clove of garlic and coarsely ground black pepperfor about 2 hours. I dry them off, then I cook them on my Foreman grill. I use as is or I use the cooked breast in other things like chicken salad, etc.

    For chicken leg quarters (or legs and thighs), I rub them all over with salt and pepper, then I put on whatever herbs/spices I want. I put them in a single layer in a baking dish and bake them uncovered for about 45-1 hour at 350 degrees F.

    I also use chicken thighs for things like stirfry and sauteeing, because they are hard to overcook (that is, cook to the point of drying out).

    Whole chickens I roast--salt pepper rubbed with butter or olive oil and herbs/spices and I roast in the oven. I use a meat thermometer when I cook a whole chicken to make sure the breast is cooked and the dark meat is cooked. I also toss the whole chicken into a crockpot add water, salt pepper, half and onion, and cook on LOW or HIGH, for a whole chicken-chicken soup type of thing.

      I use a recipe similar to a well known National chain restaurant recipe.

      I dip chicken tenderloins in a little cream (the nat chain uses creamy caesar dressing)

      Then I coat it in grated Parm cheese from the plastic bottle.

      Then I fry them in butter/peanut oil combo in a frying pan, turn once when brown on the bottom and the edges. When they appear to be done, just cut open a piece or two at the fattest part of the tenderloin to check for doneness.

        I grill everything. I love the chargrilled flavor. If I do chicken breast I also brine the skinless pieces or leave the skin on the help keep the moistness in.

          I use to be horrible at cooking chicken. I was also so worried about it being underdone that I would end up eating rubbery chicken!

          Now, I buy those bags of tyson chicken and I only by the tenderloins not the breasts. They cook very quickly and they only take minutes on my Goerge Foreman. Love it. I cook it until when I slice one open the juices run clear. The texture is different when its not done.
