  • Bread machine bread that family will eat?

    Disclaimer: I know bread is not induction-friendly, but I am researching for the future.

    Does anyone have a recipe for low-carb, bread machine bread that people with unadventurous palates will eat? I'll eat most anything but I can't say the same for hubby and son.


    I have a bread machine and I love to use it. I would like to be able to make low-carb bread that my entire family will eat. (Because: #1 I won't be tempted to eat any "bad" bread I make for them,#2 I won't have to make separate loaves and #3) Because they would benefit from a lower carb diet as well. )

    I found a recipe on Recipezaar (Best Low Carb Bread (Bread Machine) - 102631 - Recipezaar). Only 2.9 grams of carb per slice! This bread is made with flaxseed, soy flour, and vital wheat gluten. I tasted a bit and I thought it was different, but OK. (And yeah I know I'm not supposed to even taste it on induction. So spank me, LOL)

    Picky, picky hubby and son *hated* it. So I modified the recipe according to some comments made on Recipezaar. (Added 1/2 tsp salt because it did need salt, and subbed 1/4 cup of gluten with 1/4 cup of bread machine flour). They still hated it. Hubby said it tasted weird. Can anyone help?

    Looking at your recipe, IMO it was the soy flour that made the bread taste "weird." Also, are you using regular or golden flax meal? The golden has a much milder taste.

    I have saved several bread machine LC bread recipes for when I get to that rung. I will put them together and post them for you. I can't have soy so none of them contain soy.

    p.s. What size loaves does your bread machine make?

      I think it was regular flax meal-- must have been because it didn't say "golden" on it. I didn't realize there were different kinds of flax meal so that is a good thing to know.
      My machine has settings for 1, 1.5, and 2 lb loaves.

        OK, looked over my recipes and got familiar with these breads again. Some of them do have a little soy. I was planning to try subbing almond flour.

        The biggest complaint from the comments was that these breads are very spongy in texture and a lot of people do not like that. That might be your hubby's issue with the loaf you made? Toasting the slices seems to help with that. Don't know...haven't tried them yet.

        Also, many bread bakers suggest using sugar instead of Splenda. Some of my saved recipes use whey protein and/or cream so maybe that helps feed the yeast? Adding salt to your recipe was a good idea IMO. Even regular recipe breads taste somewhat flat compared to commercial breads because there is so much less salt in them.

        I have used both regular flax meal and golden but really prefer the golden now.

        So I think the biggest issue is that funky spongy texture that everyone talks about. All the vital wheat gluten causes that however, it is a key ingredient in LC breads. I have not tried any of the recipes I'm going to post and expect that I will have to play with them.

        Please post back on your experiments with these breads so we all can learn.

            Bread Machine LC Bread Recipes

            Bread Machine Gabi’s World Famous LC Bread (lowcarbluxury)

            Ingredients:

            1 pkg dry yeast (Rapid Rise/Highly Active)
            1/2 teaspoon sugar
            1 1/8 cup "baby bottle warm" water (90-100°F)
            3 Tablespoons olive oil
            1 1/2 teaspoons baking powder
            1 teaspoon salt
            1 Tablespoon Splenda
            1 cup vital wheat gluten flour
            1/4 cup oat flour
            3/4 cup soy flour
            1/4 cup flax seed meal
            1/4 cup coarse unprocessed wheat bran

            Pour yeast into bottom of bread machine pan. Add sugar and water. Stir, and let sit. (This is "proofing" your yeast to see if your yeast is alive. If it's not bubbling, it's dead and you can replace it without wasting all of the other ingredients).

            In the meantime, mix all other dry ingredients together in a bowl. Add oil to bread machine pan. Add mixed dry ingredients. Set your machine to the basic cycle (3-4 hours) and bake.

            Cool on a rack and enjoy.


            Bread Machine LC Bread (lowcarbluxury)

            Ingredients:

            1/2 cup warm water (95-105°F)
            1/2 cup heavy whipping cream
            1 Tablespoon oil
            1 egg, room temperature, beaten
            1/4 teaspoon salt
            1 cup plus 2 Tablespoons vital wheat gluten flour
            1/2 cup oat flour
            1/2 cup vanilla or unflavored whey protein powder
            1 pkg Rapid Rise yeast

            In a large bowl mix vital wheat gluten flour, oat flour, salt, and whey protein powder until well sifted together. Set aside.

            Heat cream to slightly warm; then mix with warm water and egg. Add oil to bottom of bread machine. Then add water/cream/egg mixture. Carefully add flour mixture so it 'floats' on top of liquid. Sprinkle yeast packet evenly across the top of flour. Set your bread machine according to directions for "Rapid Bake" (usually 2 hours) or whatever settings allow a full rise cycle but only one knead cycle.

            Entire Loaf: 60 grams net carbs.


            Bread Machine LC Multi Grain Bread (lowcarbluxury)

            Ingredients:

            1 cup vital wheat gluten flour
            2 cups whey protein powder, unflavored
            1/4 cup wheat bran
            1/2 cup pecan meal
            1 teaspoon salt
            1 package dry yeast (Rapid Rise/Highly Active)
            1 egg (room temperature), beaten
            2 Tablespoons Splenda
            1 3/4 cups warm water (95-105°F)
            1/2 cup sunflower seeds, or flax seeds

            Mix dry ingredients in separate bowl and sift together well. Add ingredients to bread machine in the order recommended by your machine's instructions.

            Set your machine to the basic cycle (3 – 3 1/2 hours) and bake. With most machines it benefits low carb breads to allow only one kneading cycle, then allow to bake. This recipe makes a bread that's dark, chewy, dense and flavorful — very like "old world" 7-grain bread. This bread works best in a machine.


            SPECIAL NOTE/READ! Because there are so many fans of this bread, we are keeping this recipe at the site, but we recommend you DON'T make this your first try at low-carb bread making (or first with a machine.) This recipe can come out with quite differing results depending on brand of whey used, brand of gluten used, and bread machine brand.

            Makes 16 slices. Entire Loaf: 48 grams net carbs / 3 grams net carbs per slice. (1.5# loaf??)

            Bread Machine LC Seed Bread (by goodgal (Sandi) ADBB)

            I got the recipe out of the 500 low carb recipes by Dana Carpender. It looks wonderful! This is for a 1 pound loaf, so I'll have to multiply by 1.5

            Seed Bread

            1/2 cup warm water
            1/2 cup heavy cream
            1 tablespoon oil
            1 egg
            1/2 teaspoon of salt
            3/4 cup vital wheat gluten
            1/2 cup oat bran
            1/3 cup ground almonds
            1/3 cup chopped sunflower seeds ( I think I'll use half sunflower and half pumpkins seeds )
            1/4 cup rice protein powder ( I plan to use whey isolate protein )
            2 tablespoons flax seeds
            1/2 teaspoon black strap molasses
            1 teaspoon Splenda
            2 teaspoons regular yeast

            Directions call for adding the ingredients to the breadmaker in order given. yield 10 slices with 8 grams of carbs each and 2 grams fiber for 6 net carbs.

            Bread machine Low Carb Nutty bread

            This is a quick and easy bread is great for low carber's it's a modification of the super low carb bread found in the Cusinart bread machine cookbook.

            Nutritional Info

            Fat: 4.4g
            Carbohydrates: 9.8g
            Fiber: 2.1g
            Calories: 91.1
            Protein: 7.1g

            Ingredients

            1.25 cups bottled or filtered pure water
            2 tbsp heavy cream, room temp
            1 tbsp molasses
            1/2 tsp table salt
            1 cup whole wheat/whole grain flour
            1/2 cup vital wheat gluten
            1/2 cup barley flour ( ground up barley oats in food processor, until powdered)
            1/2 cup oat flour ( ground up old fashioned rolled oats in food processor, until powdered)
            1/2 cup almond flour ( place 4oz whole raw almonds in food processor until it is a course meal)
            2 tbsp soy protein powder
            1/2 cup scant flax seed meal
            1/4 cup walnuts
            1/4 cup pecans
            2.25 tsp active dry yeast

            Directions

            Add ingredients in order listed in your bread machine. It's usually liquid ingredients first, then salt, flour, nuts and yeast. Set bread machine to basic white for 1.5 lb loaf. Each serving is 1oz by weight! you must measure this on a scale. Most slicing guides will have you slice 2 or more ounces!

              I also saved this as I thought it may be useful. It is a homemade version of Carbquik. All ingredients can be found at netrition.com. You will probably need to buy the oat fibre from them as I've never seen it in stores.

              Bev-Ann's All Purpose Flour Substitute (lowcarbfriends)

              I tried using CarbQuik when it first came out and never had any luck with it. So, through a lot of trial and error, I developed my own flour substitute. It rises nicely and has worked for me in every cookie, muffin and quick bread recipe calling for regular white flour. I haven't tried it in anything that uses yeast.


              Since I put so much effort into developing this, please give me the credit if you decide to share it with others.


              Bev-Ann's All-Purpose Flour Substitute - makes about 7 cups

              1 1/4 cups wheat protein isolate
              1 1/2 tsp guar gum
              1 1/2 tsp xanthan gum
              6 tbsp vital wheat gluten
              1 1/4 cups oat flour
              2 3/4 cups oat fibre (not bran!)
              1 1/4 cups flax meal

              Add ingredients in order given and stir well with a whisk after each
              addition. Store in a covered container in the freezer. No need to thaw before using.


              Per cup = 11.31g net carbs and 262 calories.

                I think if your family like the bread to be very traditional that it will be hard to convert them to a gluten bread. I would just bite the bullet and make a bread for you and different one for them. After all it is easy in the bread machine. That is what I do at home. My daughter likes my bread when it is fresh so we share it.

                I also think soy may be one of the issues. Some people do not like it. If you add flour to it it will be very hard for you to eat on Atkins.

                I make a bread for myself that I like and that goes something like this:


                1 1/4 cup warm water
                1 tablespoon olive oil
                1/4 tsp salt
                1 egg
                1 cup vital wheat gluten flour
                I cup of mixture of stuff (I use soy, flax, oat, wheat bran (which I love) or whatever I have around)
                1 tablespoon Splenda
                1/2 tablespoon active dry yeast

                It looks like this
                Startdate: November 18, 2007. Female 5'2"

                May Challenges 2010
                Push-ups: 450/800
                Abs: 850/1900
                Squats: 650/1200
                Lunges: 500/1000
                Strength: 490/1200
                Running: 50/100 km

                  Unless it was deleted during one of the several board upgrades, you might be able to find NulloMondo's recipe for his version of O'Solo. O'solo was a brand of low carb bread that came out in the 2003-2004, and was taken off the market because the company had financial issues. Anyhow, Nullo was able to make his own version of it, using a bread machine.

                      Thanks for all those recipes! That will keep me busy baking for awhile. Hopefully one of them will be found "acceptable" and I'll freeze the rest for later use by me.


                      I did find that toasting the bread did away with the springy texture. They eat their bread toasted most of the time anyway. I think it was mostly the taste they didn't like.

                          LOL. That would be a carb-and-fast-food disaster! Hubby's already 30 lbs overweight and I can't let my son be subjected to food-abuse (he's only eight).

                          I've told my husband (only half-joking) that I won't be real happy if I have to take care of him in the aftermath of a self-inflicted heart attack.

                            Another recipe to try. I'm not sure of the loaf size (1.5# ??).

                            Very Low Carb Bread Machine Bread

                            1 package dry yeast
                            1 tsp sugar (for the yeast)
                            1 1/8 cups water - baby bottle warm
                            3 Tbs Olive Oil

                            Mix other dry ingredients together in another bowl.

                            Take out when done and still warm, slice, smear with butter or spread of choice and ENJOY!!!


                            15 slices: per slice: 82.3 calories; 7.6g protein; 3.6g fat; 6.3g NET carbs
                            18 slices: per slice: 68.6 calories; 6.3g protein; 3.0g fat; 5.3g NET carbs

                              Thanks. I'll try that one too. I've been out of town and haven't had much opportunity to start my cooking tests, but I will do so soon and post reviews from the picky people in my family.
