  • Induction meals and Ideas

    I am single and a beginner cook, and wanting to know simple meals for induction. I dont want to burn out on cooking same ole bacon, eggs, and salad, and beef....so any suggestions for breakfast, lunch and dinner would greatly be appreciated...remember i am in induction so it has to be below 20 carbs....Thanks and God Bless.

    What sort of foods from the allowed list for induction do you like to eat, Richard?

    What kitchen equipment have you got access to? Oven, grill, microwave, stove top, george foreman gadgets, etc ???

      I don't have a stove, but i have a hot plate, and a microwave, a george foreman grill, and a good toaster oven....from the induction list i like lettuce, chicken, beef,eggs, cheese, mayonaise, celery, cauliflower, and broccoli, and cucumber

        i brought all this stuff at grocery store this morning except cauliflower.

          How about like a "chicken stir fry". Cut up measured amounts of celery, red pepper, mushrooms, onions, cook a little till tender, add strips of chicken breast, or whatever shape you want, smaller pieces cook faster, add some seasonings---salt, pepper, garlic powder. Maybe throw in some fresh spinach as well. Sometimes I add a dash of low sodium soy sauce. But that is not 100% Induction friendly due to the ingredients, so you may want to stay away from that.

            I'll tackle the more unusual ones:

            Celery:
            The "usual" sticks and dip, use in stews (made from your chicken and beef)
            Celery slaw: thinly slice the celery, mix with mayo and thinly sliced onion (to taste). Salt and pepper to taste.

            Cauliflower:
            Faux mashed potatoes
            Roasted cauliflower: cut the cauliflower into the florets and cube the stems. Toss with olive oil. Place in a pan and cook in the toaster oven at 350 stirring every so often, until the cauliflower is golden brown. Eat as is, or mix with a bit of sour cream and curry powder for a curry cauliflower salad.
            Faux potato salad: steam the cauliflower and cool it. Chop into cubes and mix with mayo, sliced onion, chopped egg, etc.
            Cauliflower and cheese

            Broccoli:
            Broccoli slaw: chop the broccoli, including the stems, add onion, chopped red pepper, etc. toss with either mayo or a viniagrette
            Broccoli and cheese

            Stirfry: broccoli, cauliflower, plus chicken, beef, CElery can be added at the last minute so it retains its crunch.

            lettuce:
            Use large leaves as a wrap
            Thinly sliced lettuce leaves can be added at the last minute to brothy soups, like Asian type soups.

            Cucumber:
            The usual raw cucumber preparations.
            Cooked cucumber: peel, remove the seeds and cube, saute in butter, salt and pepper. It's a classic pairing with fish in French cuisine, but can be paired with grilled chicken.
