    Basic oil & vinegar salad dressing?

    I have found some online recipes that say to use a 3:1 ratio of oil (I plan to use extra virgin olive) and white whine vinegar, with a splash of lemon juice, salt, and pepper for taste. Does this sound about right? Any other recommendations?

    You can use a 4:1 ratio. It really depends on how tart you like your salad dressing to be. I don't add any sweeteners to my viniagrettes (many recipes add a sugar, honey or something like that) so I tend to use a 4:1 or 5:1 ratio. But be sure to include the splash of lemon juice or anything that has a sour taste as part of the vinegar amount.

    I also add a teaspoon or two of Dijon mustard and dried herbs for extra flavor to my salad dressings.

      PS, if the dressing tastes too "oily", add a pinch of salt to reduce the oily texture.

        Thank you! I made this today and not only was it incredibly simple (which makes it perfect for me) but it was tasty and refreshing. I like the idea of some Dijon mustard.

          And it's incredibly inexpensive too! I make it in a glass jar (which formerly contained tomato salsa) and store the leftovers in the fridge.
