  • Breakfast (uncooked) Ideas greatfully received!!

    Hi i am on day 2 of Atkins and i am finding it difficult to get a quick breakfast!! We are always rushing around getting the children ready etc and don't have time to cook eggs etc! We used to have cereal or toast - HELP!!! Is there anything quick/easy to grab!!

    I prepare something the night before that can be easily grabbed - make a frittata or crustless quiche, or cook extra 'leftovers' from the evening meal.

      Thank you for your reply!! But was rather hoping for something not cooked (either moring or the night before) - is there any smoothies or milkshake type drinks instead - i just am struggling with the flavours & time in the morning!!

        I make smoothies in the morning with Jay Robb's egg white protein powder, 2 Tbsp cream, ice cubes, lemon-flavored cod liver oil and some cold water (sometimes I toss in a raw egg, but use caution since raw eggs may carry salmonella). The ingredients, save for lecithin which seems to be in everything (including Celestial Seasonings herbal tea) are induction friendly, and is sweetened with stevia, my favorite of the sweeteners. It's more expensive, but it's worth the money, in my never so humble opinion.

        If you don't want to go the powder route and feel safe drinking a shake made with raw eggs instead (check with your doctor to make sure it's ok for you to consume raw eggs), combine 2 raw eggs with sweetener, water and cream for a frothy smoothy you'll enjoy. If you want flavor, but the Sweetleaf Stevia Drops. they come in a couple dozen flavors, and a little goes a long way.

        Another quick option is to make meg's flax cracker in the microwave. It's super fast. Just 2 Tbsp flax seed meal and 2 Tbsp water, mixed, spread on parchment and microwaved for 2.5 minutes.
