  • Pumpkin Recipie???

    Well, I have about 1 to 1 1/2 cups of leftover canned libbys pumpkin. I am looking to make something for dinner using it....Just nothing watery (Yuck :P ) Thanks to anyone who can help!

    Do you like sweet or savory?

    For savory, I like to put canned pumpkin into a pot, cook on low heat, stirring so that it won't burn. This will cook out the excess water. Then I remove it from the heat, add a pat of butter, salt and pepper to taste, and maybe a drop of heavy cream. Beat it. And serve as a side dish----similar to mashed sweet potato.

    I'm not fond of sweet pumpkin recipes, so I don't have any sweet recipes committed to memory.

      Both From Linda's Low Carb Recipes

      Induction Friendly:

      JODY'S PUMPKIN BAKE
      8 ounces cream cheese, softened
      5 eggs
      1/2 cup granular Splenda or equivalent liquid Splenda
      15 ounce can pumpkin
      1 1/2 teaspoons Pumpkin Pie Spice
      1 teaspoon cinnamon
      1 teaspoon vanilla

      Put the cream cheese in a medium mixing bowl and beat with an electric mixer until smooth. Add the remaining ingredients and beat well. Pour into a 6x8" greased glass baking dish. Bake at 350º about 40 minutes or until the center feels firm and a knife inserted in the center comes out relatively clean. Cool, then chill before serving.
      Makes 6 servings
      Do not freeze
      With granular Splenda:
      Per Serving: 228 Calories; 18g Fat; 9g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs With liquid Splenda:
      Per Serving: 220 Calories; 18g Fat; 9g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs

      Not Induction Friendly:


      DEXMIS'S PUMPKIN CUSTARD
      15 ounce can pumpkin
      1/2 cup granulated Splenda or equivalent liquid Splenda
      1 tablespoon Brown Sugar Twin, optional
      2 eggs
      1/2 cup heavy cream
      1/2 cup water
      1 teaspoon vanilla
      1/2 teaspoon salt
      1 teaspoon cinnamon
      1/2 teaspoon nutmeg
      1/8 teaspoon ginger
      1 cup heavy cream, whipped, optional
      Combine in a large bowl in order given; beat well. Pour into a large, buttered pie plate. Bake 350º, 45-55 minutes until a knife inserted in the center comes out clean. Chill before serving. Serve with whipped cream, if desired.
      Makes 8 servings
      Do not freeze
      With granular Splenda:
      Per Serving: 97 Calories; 7g Fat; 2g Protein; 7g Carbohydrate; 2g Dietary Fiber; 5g Net Carbs
      With whipped cream: 200 Calories; 18g Fat; 3g Protein; 8g Carbohydrate; 2g Dietary Fiber; 6g Net Carbs
      With liquid Splenda:
      Per Serving: 91 Calories; 7g Fat; 2g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs
      With whipped cream: 194 Calories; 18g Fat; 3g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs

        I honestly just take a teaspoon or two of pumpkin pie spice and maybe sweetner if I feel like it per 16oz can.

          I love pumpkin curry. it is easy to fix and yiou can add any cooked shredded meat to the soup and have dinner in a bowl.

          you have 1/2 the amount of pumpkin I normally use so you'd need

          1/4th diced onion,
          1/2 clove garlic
          1-2T fat of choice (I use butter or EEOV)
          1-2 T curry paste ( if you don't have paste but have powder 1-2 teaspoons works)
          2 cups chicken stock
          canned pumpkin

          heavy whipping cream about 1/2 cup

          sweat the onion in the pot with the fat. as the onion begins to get clear add the garlic and the curry paste.
          cook 1-2 min more.

          then add the chcicken stock and stir well bring to a boil and simmer on low heat.

          carefully add the pumpkin to the pot and stir in well. becareful cause the pumpkin will "plop" when it comes to a boil and splash you.

          if you want to add a cooked protein to the pot now would be the time to do it.

          Add 1-2 T heavy whipping cream to each bowl before serving. you could add it to the pot but it tends to break when you freeze the soup if you want to save some for another day

          when you get to OWL rung 3 you can add sugar free coconut cream instead if you like.

            All of the recipies sound yummy! Thanks everyone! I actually, have a few 15 oz cans in the pantry.....I am definatly going to try some of these!
