  • cream sauce for cauliflower?

    My mom makes this white sauce for her cauliflower...but the base is flour and butter with milk...What else can I use?

    I know I could use the heavy cream instead of milk...but the flour? Thats the key ...and I dont want to eat that....

    I've just been making a cheese sauce by melting about 2 tbsp butter, adding 1/4 cup of cream, shredded cheddar (you'll know how much cheddar to add based on the consistency when it's melted). Then I add a dash of worcestershire to give it a bit of a bite and maybe a tiny bit of cayenne or hot sauce, melt it all together and there it is! No flour needed. I love it on any steamed veggies.

      I will be making it tonight...I bought some heavy whipping cream...(just because it was on induction)..lol...And have no idea what to do with it...lol

        You can reduce heavy cream until it makes a sauce, then season to taste. I like it a lot more than the bechamel-type white sauce that's made from flour. It's good for OWL, but you won't get much sauce from the three tablespoons of cream you get for induction. And it carries a heck of a caloric payload.

          Cheesy Cream Sauce

          My husband likes this on brocolli or cauliflower:

          Melt some butter in a skillet over medium heat and toss in a Tbsp of minced garlic (I use the kind in a jar). Saute' this until it gets a little nutty in color and then add a little cream or half and half, salt, and freshly ground pepper to taste. Then take about a half oz of smoky cheddar cheese and stir it in until it is melted and the mixture lightly coats the back of a spoon. This is yummy and my non-dieting family enjoys it too!
