    Yep. Make your own low carb sausage! Add fennel seed, salt, pepper and dried herbs to taste. For an Italian style sausage I like crushed red pepper, garlic, basil, thyme or tarragon. For breakfast style sausage, plenty of sage.

    Sausage you make yourself has no fillers and is lower in carbs than commercially processed sausage. Measure your dried herb quantities so that you will have an accurate carb count for the entire batch.

      I made an induction friendly eggplant parmesean using ground pork:

      Ingredients:

      1 large eggplant
      1 lb ground pork
      1/2 large can whole tomatoes ( look for brand that's 2 carb per 1/4 cup serving can)
      1- 6 oz package shredded mozarella

      -Cut eggplant into thin slices - longways and sautee in a little olive oil to soften (drain the eggplant first on papertowels so the bitter juices drain out).
      -Cook 1 lb of ground pork in a pan, drain.
      -In a 9" square pan, spoon small amount of tomatoes with their juices over bottom. Put first layer of eggplant down. Spoon layer of ground pork over eggplant, then add tomato, then top with shredded cheese.
      - Add next layer of eggplant and ingredients.
      - For last layer, top with remaining eggplant and sprinkle cheese on top.
      - Bake at 350 for 30 minutes
      - Makes 4 servings.
