OK, I know there are a lot of LC biscuit recipes out there. Weve tried about half a dozen and my wife hates them all! I liked the LC version Red Lobster cheese biscuits I found from another LC recipe site. But even they are flat. FLAT, FLAT, FLAT. My wife wants something that looks like a biscuit(to her). Before we attempt another dozen biscuit recipe, how about some advice from someone who's tried lots of different biscuit recipes. What's worked for you?
    Thanks in advance,
    Jim

Ummm... I don't have a recipe for you, but have you tried carbquik? When it comes to biscuits, I think that's the clear frontrunner - by quite a bit actually.

Hehe, and then you can be like me and make flat carbquick biscuits

Try using some extra leavening agents in your recipes, or cook them in a muffin tin instead of on a sheet pan.

Ztac, Im not on Induction.. Been doin' Atkins over a year. Just not a prolific poster. Many of my posts have "disappeared" because I had some disagreements with the way they interpret, 'by the book'.
Anyway, Here's the recipe you asked for:
          1 cup Atkins mix
          2 oz butter
          1/2 tsp salt
          1tsp. of garlic powder
          3/4 cup half and half
          3 oz cheddar cheese shredded
          3 tbsp of sour cream

Mix dry stuff. Cut in buter until crumbley. Stir in liquid and sour cream.
Add only enough liquid to make it mixable and spoonable. Add cheese and mix.
Spoon onto greased cookie sheet and bake at 375F for 15-20 minutes. Gently remove from cookie sheet and let cool slightly on a wire rack, they will be very tender and crumbly at first. Serve warm.
