I found some more simple recipes for eggnog at the atkins website.
Feel-good foods, real-life flexibility & expert guidance with Atkins’ science-backed, high protein lifestyle. Support your weight loss & metabolic health.

I alternated their "traditional eggnog" for a smaller batch to this:
        3 eggs
3 capfuls of atkins vanilla syrop
        1 packet of sweetner alternative
1/2 cup water(tasty water, not tap)
        1/2 cup heavy whipping cream
        1tbsp nutmeg
        1tbsp cinnamon

Throw all of this in a blender and blend until smooth and frothy. It helps to blend the eggs alone then add the rest of the ingredients. There is no need to cook the eggs or chill the nog if you had everything in the fridge already..Great for a quick tastebud pleaser!
I am thinking of experimenting with protein powder and coffees to make different types of eggnog. This makes 3 servings so if it's a personal batch you can store it in the fridge for a little while until your next serving.
        I LOVE eggnog!

Wow, I added just one more egg to my batch and it makes ALL the difference..I keep eggnog for my Daughter and mine tastes almost exact to hers (with 4 eggs) Great consistancy and I've had a glass for breakfast when I was running out of time..

Thanks Cherie_25. I love it too and hadn't taken the time to search for a recipe yet. Can't wait to try it out.

ack! is that last recipe thick and yummy like the real thing?

I was just stumbling around the internet looking for a recipe for eggnog that was sugar free.....

ended up registering on this website. I'm a newbie. eeeegads.

I don't actually "atkins" but something very similar. My co-workers think I'm insane for eating like I do.
how can you have your pudding if you don't eat your meat??????????

with the 4 eggs it is! Probably just a wee bit thinner than your average high sugar version but pretty darn close..My daughter loved my version and she drinks regular all the time. I just wanted to add that you can use egg scramblers or another brand of pasterurised eggs (in the carton) to keep the egg nog longer..Might also give it even more thick consistency.
