My hubby loves the stuff... anyone with any suggestions? I've been told that the lo-carb store which just opened about 45 min. away gets it in but it's gone almost immediately (and is very expensive). I'd really like to try to tackle this one ... it'd be great for the holidays!

Peanut Brittle?!!

I don't see why you could not substitute Splenda or possibly Diabetisweet or malitol crystals for sugar in a peanut brittle recipe. There may be a chemical reaction I'm missing, so try it out with different substitute sweeteners and see what happens. I used to do some candymaking for the holidays so I might see what I can come up with in this respect.
If you experiment, please let me know what comes up!

There is a sugar free honey at the Super Walmart that I use and it tastes and looks just like the real thing. It was in the isle where the regular honey was not with the rest of the low carb foods. The brand is HoneyTree's. It is sweetened with malitol. I made peanut brittle at Christmas with it instead of using the syrup that my old recipe called for and it was very good. :laughing
