    1lb ground beef
    1 small can diced tomatos
    1 can diced green chilies
    1 small onion, diced
    1 small green bell pepper (or red or yellow.. your choice)

    Cook ground beef throughly, drain and add beef back to pan. Add onion and bell pepper and cook until they are soft. Add tomato and chilies and warm through. I like to serve this over cauliflower, broccoli or tofu.


    You can also make pretty yummy hamburgers. Add ground beef to a bowl and add spices, onions, etc. You can also add shredded cheese to the mixture or you can make the patties and then put shredded cheese on top.. or make two thinner patties and put the cheese in between them.

    Cook ground beef and add some spices (season pepper, season salt, garlic, etc.), make sure it's in fairly small pieces and add to boiling beef broth or chicken broth, add some veggies and you have a yummy soup.

    Make meatballs! Dang, it's been awhile so I don't have the exact recipe but it's close:
    3lbs ground beef (you can use lamb, pork, turkey, etc. too)
    1.5 cups shredded sharp cheddar (or pepperjack or cheese of your choice)
    1 small onion diced fine
    1/2 cup parmesan cheese
    2 eggs

    Preheat oven to 425degrees
    In a mixing bowl throughly mix all ingredients. Spray a cookie sheet with nonstick spray. Roll meatballs into small balls (you can make them bigger just check for doneness) and cook for 20-25 minutes.

      Make "Mabo tofu"!!!

      It is a chinese recipe with tofu and beef, modified to exclude cornstarch and sugars, and absolutely yummy! I love it.

        I made meatballs the other day then covered them with low carb spaghetti sauce and baked them right at the end I covered them with mozzarella cheese baked until hot and bubbly and served over spaghetti squash it was really good and satisfied my cravings for Itialian food.

        Meatballs...
        first in the food processor grind up some pork rinds until you have about 1/4 cup of fine crumbs remove from processor and add
        1/2 small onion
        3 cloves of garlic
        1/4 bunch of cilantro or parsley
        mince this all up fine and add to...
        1/2 pound ground beef and 1/2 pound ground pork
        add salt and pepper lots of fesh cracked pepper
        brown these on all sides.... you can now freeze these individually on a cookie sheet then put in a ziplock for later use, or just use them as they are good eats!!!!!

          How about adding some seasonings and an egg and stuffing it into a green bell pepper top with a little SF tomato sauce or paste and bake!

            I was ordering beef online and came upon a site www.AffordableNaturalBeef.us which has a page with ground beef ideas. I had to tweak several of them to be low or no carb, but I found these ideas very useful. Like anything with pasta, I use spaghetti squash. I also make italian sausage from ground beef. Who sais it can only be made with ground pork?
