I brought a can of salmon, and i was wondering about some simple recipes for it. When i was growing up my mom made fried salmon patties that were really good. I guess she put meal on them to fry them? Not sure on that part. Im not big on frying, rather use a grill. I just cant picture eating a salmon salad, ugh. It says on the can pink salmon. Maybe because my mom always cook in, and we never ate it raw.

Salmon cakes
1 can salmon
2 tablespoons finely minced onion
1 egg
salt and pepper to taste
1 teaspoon Dijon mustard
Remove the bones and skin from the salmon. Mix it together with the onion, egg, salt pepper and Dijon mustard. Try not to mix it too much because it will have a better texture if some of the salmon is still in medium sized flakes.
Gently form into 2-3 inch cakes, about 1/2 inch thick.
Heat frying pan. Add oil or butter. Put in the cakes. Fry until golden brown. Flip and fry other side until golden. DO NOT move the cakes while they are frying or else they'll fall apart.
You can add chopped or dried herbs, red pepper flakes, minced garlic,e tc. to the salmon mixture, if you like.
2 cans of very well drained tuna can be used in place of the salmon for "tuna cakes".
I like to serve these with a mustard mayonnaise sauce ( equal parts Dijon mustard and mayonnaise mixed together).

Salmon salad is really good especially to eat on celery. one time I mixed the canned salmon with cream cheese and lemon juice and some parsley and scooped out cucumbers filled the hollows put them back together chilled and then sliced this was a really good snack and would be a good party food too. salmon patties are always good though I do add just about 1/4 cup maybe a bit less of pork rinds that I have run through the food processor instead of crumbs..I do this when I make crab cakes too. it helps them stay together.
