  • Baking MIX Recipe

    I have purchased Vital Wheat Gluten. I have Oat Flour and Soy Flour, and also some Carb Solutions Vanilla powder. Are any of these useable to make a fake biscuit baking mix? I have not been able to find any low card tortillas, nor any low carb bread mixes. Our Walmart has a few low carb products, but other than that I only have GNC to go to and they are waaaay to expensive.

    I cannot locate Soy Protein Isolate anywhere.

    HELP!!!!!!!

    Try this:

    1/2 cup oat flour
    3/4 cup soy flour
    1/4 cup vital wheat gluten
    1 tsp baking powder
    Pinch of salt
    1/2 stick butter

    Chop butter into small cubes. Place all ingredients into food processor and pulse until the mixture is like coarse meal. Store in the refrigerator.

    This mix would be improved in my opinion if you bought some almonds (blanched would be ideal but skin-on is OK too for additional texture) and ground them in the food processor into a fine meal. Add 1/2 cup of almond meal and 1/4 cup of grated hard cheese before cutting in the butter, and this should be a fairly promising biscuit mix.

    Add barely enough liquid (heavy cream is good) to make the dough follow the fork around as you slowly mix it in. Do not overmix a batter that uses this "cutting in the butter" technique.

        One more question, How do I count the carbs for this mixture? I did find some carbsense no carb baking mix at Wal Mart. They have it on the paper towel aisle in our Super Walmart. Go Figure!!!
