I tried them too and asked the cook. Here's the basics:

    1 head cauliflower
    1/2 cup butter
1 tsp pepper -- up to 1 tbsp

Cook 1 head of cauliflower until very soft. MASH all the water out of it through a screen mesh colander (If you skip this step you get cauliflower soup). Add 1 stick butter and considerable pepper (min 1 teaspoon up to a tablespoon - careful it goes from perfect to HOT very fast). Whip with mixer or in food processor, re-heat if necessary.

OMG, I Didn't even know Ruby Tuesday was doing low carb but I went there for dinner today thinking I would do my usual Grilled chicken breast with Hot Sauce and Ranch with Broccli and no fries but then....I saw the low carb menu....YEAH!!! :laughing

I had the church street chicken and the Califlower....I LOVE THAT CALIFLOWER! I asked the manager what was in it she said that is comes premixed....hmmmm I have to find who that vendor is and order a truck load!!

And I had their low carb cheese cake....YUMMY!! I got one peice to go so I can have it for breakfast in the morning!

i just went there today. i had the grilled talapia fish with cajun seasons, the broccolli, and the mashed cauliflower. it was all fabulous. i have made the cauliflower before but my recipe said to add cream cheese and the put cheddar cheese on top and bake it after mashing the cauliflower. this was good, but it was like a vegetable side dish. the ruby tuesday cauliflower did taste like mashed potatoes more. LOVED IT!!!

Friendly, what stage are you in?

Pay careful attention to the carb counts in each of those items, the Ribeye steak with spinach and creamed cauliflower is close to 20 net carbs (due to what is used in making the spinach mainly).

There are no hidden sugars in the dishes other than what is states on the menu, but if you have been going from an even 20 carbs spread through the day to almost 20 in one meal, that could negatively effect you. I have been to Ruby's many times, usually getting the burger wraps as I have no desire to eat steak from somewhere that doesn't specialize in it, and have never had any ill-effects.

                  2day for Lunch~

We went to Ruby Tuesday's today for lunch. I got the Petite Sirloin, Pork Rinds, & mashed cauliflower. It was 13 Net Carbs. It was good but I did NOT like the cauliflower. It made me sick~

I just went to Ruby Tuesdays today and ordered the exact same thing. INCREDIBLE!!! I only hope it was legal for induction. I thought it was, but everything was so wonderful that I can't see how it possibly could be...

IIRC correctly there is nothing in the church street chicken that wouldn't be induction legal...

you can eat incredibly well on induction, you just have to know how to use certain ingredients well.

Watch out for that creamed cauliflower I read on the website it has 11 carbs. That is ridiculous there is definitely something hidden in there. :nono

They probably just use a mix of milk and cream instead of pure heavy cream for the sauce (to save money) that would account for the the carb count.

Ya know what Nullo, you are most probably right...When I asked them for heavy cream so I could have a cup of decaf for desert, (while hubby polished off a blondie n ice cream) there wasnt any cream to be found..Not in the kitchen or at the bar either...So I had to forego on the decaf. If they used cream in the cauliflower, they would have had some for the decaf...The reason the church street chicken is 13 net carbs is because they are including the cauliflower in there. Next time I will forego on the cauliflower, even though it was the most delicious thing (to me)...

I got a receipe book full of resturants secret receipes oOOO

theres pretty much no low carb receipes but there is the ruby tuesdays mashed cauliflower.

                              heres the receipe

                              ruby tuesday creamy mashed cauliflower

                              1 head cauliflower
                              3/4 cup water
                              1 tbls corn starch
                              1/3 cup heavy cream
                              1 teaspoon sugar (hmmmm)
                              3/4 tsp salt
                              1/4 tsp black pepper
                              1/8 tsp garlic powder
                              1/8 tsp onion powder

                              1. divide a head of cauliflower into florets that are all roughly the same size. steam cauliflower peices over boiling water for 15-20 minutes or until tender. drain and toss in a bowl of ice water to stop cooking.

                              2. when cauliflower has cooled, put them in a food processor along with 1/2 cup water. puree the cauliflower on high speed untill smooth, but with a few peices of small bits for texture.

                              3. pour all of puree into medium sauce pan. dissolve the cornstarch in the remaining 1/4 cup of water and add the solution to the cauliflower.

                              4. add the cream, salt, white pepper, garlic powerd, and onion powder to the caulifflower and stir. set the saucepan over medium heat and cook, stiring often for 5-10 minutes or until thick.

                              makes three 3/4 cup servings

9 net carb according to book
