    OK THIS A MENUDO LOVER QUESTION. I KNOW ALOT OF PEOPLE THINK ITS GROSS!!!!! BUT........
    I AM HISPANIC AND I LOVE MENUDO, WHERE I COME FROM, AND IN MY FAMILY, MENUDO IS EATEN EVERY SUNDAY AFTER CHURCH.
    I CANT THINK OF ANY REAON WHY I WOULDN'T BE ABLE TO EAT IT EXCEPT IF IT'S COOKED WITH ONION.

    SO I GUESS THE QUESTION IS, CAN I EAT IT??
    ANYONE OUT THERE KNOW THE ANSWER???

    Okay, as a non-hispanic person Menudo is a boy band with Ricky Martin! :yikes Sorry...I couldn't resist!

    But I do love hispanic food, both mexican and cuban and eat it often. How is menudo prepared and what is in it?

        OH WOW HOW FUNNY!!!!!
        I DIDN'T THINK I WOULD GET THAT KIND OF RESPONSE, LOL.
        Well since you asked..............here goes............
        it's basically water, chili powder (a special kind), hominy (similar to corn on steroids) and meat (cow tripe, which is the lining of a cow's stomach). Put all that together in a pot and boil with onion, cumin and garlic.
        So there you have it, you've had your daily dose of COOKING WITH VEEVEE.

          the only big no-no i see is the hominy (hominy canned, 1/2 cup, 16.0 grams carbs), but you could pick it out, or just wait until you are at the point where you may have corn. my dad loves the stuff, but i can't bring myself to swallow it, hehe.

            The hominy is definitely a no-no and you might have to limit the tripe as organ meats are limited to 4 oz. per day. I wonder if you could get creative and make a "mock menudo"? Maybe substitute cut up cauliflower for the hominy and beef (or corned beef, since it's fatty) for the tripe? Let us know if you're successful with the substitutions...this sounds like an interesting recipe! :wave

              Hmmmmmmmmm
              I don't know how my family would handle the subs. I think I could handle the cauliflower. As for the corned beef, I just don't think it would taste the same. Who knows?? Well I will you keep you guys posted. Let me know if anyone tries to cook or eat some MENUDO.

                I'm glad you asked the question...I absolutely love Menudo!! Sounds yummy that we can at least have the meat, and the juice and 1/2 cup of hominy....OMG...doesn't anyone know menudo has to be eaten in a HUGE bowl??

                Oh well...no one said this was going to be easy.

                  I love menudo!!! I have had fanstastic types made just jalepenos onions some tomato and the trip then served with oregano and chile..I ate it on induction!!!..I believe there is a bit of carbs in the tripe but if it dose not have posole or other starchy veggies in it ..I say enjoy!!!!

                  it is soul food menudo is ...my husband feels he should before he dies taste every menudo in the US!!!!

                  from one menudo lover to another ..I say if it is made with out starchy veggies and a family tradition ...you must continue it!!!

                    yeah avoid the hominy unti you add the corn back into your diet but really ...it is fantastic with out it ...

                      I eat menudo now and then when my mom makes it (I'm half Mexican, half French). For the most part you can avoid the hominy. Most places skimp on the hominy so usually I can just avoid it! Although I like menudo, my soup of choice is birria!!!
